STEP 1

To prepare choux pastry for pancakes, prepare all the necessary ingredients. Bring the water to a boil, since you need to add boiling water to the dough. You can take milk of any fat content. Take larger eggs. If the eggs are very small, you can take 1 egg more. Sift the flour through a fine sieve to enrich it with oxygen. Adjust the sweetness of the pancakes yourself. Usually 3-4 tablespoons are enough.
STEP 2

To prepare the dough, take a deep bowl so that splashes do not fly when kneading. Combine eggs and sugar in the bowl.

Add vegetable oil and milk to the bowl. Mix with a whisk.

STEP 5

When the flour is well mixed into the dough, add boiling water and immediately mix everything well. By adding boiling water, the flour in the dough will brew and the finished pancakes will be more elastic and tender. Let the dough stand for about 10 minutes. During this time, the dough will sit and become a little thicker. Be prepared that you may need more or less flour than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough.
STEP 6

The finished dough should have a liquid consistency. Although this point can be adjusted to your taste by adding or reducing the amount of liquid. I prefer thin pancakes, so I cook them with liquid dough.
STEP 7

Bake pancakes in a pancake pan and serve them with any additions - jam or sour cream. It is enough to grease the pan only before the first pancake.
