STEP 1

How to make falafel from chickpeas? Prepare the necessary ingredients. You can take any greens you like: dill, parsley, cilantro, mint, etc. You can take some more spices, or exclude some altogether - be guided by your taste.
STEP 2

Sort the chickpeas if necessary. Fill it with water and rinse. Fill with water again and leave at room temperature to swell for 10-12 hours, or overnight. During this time, the peas will absorb all the water and will be swollen. If any liquid remains, it must be drained. You can also not infuse chickpeas in water, but boil them until half cooked.
STEP 3

Peel the onion and garlic, rinse the greens. Cut the onion into small cubes, pass the garlic through a press, finely chop the greens.
STEP 4

Grind the chickpeas using a blender or meat grinder. The structure must be homogeneous. I used a meat grinder. You can also mince greens and onions with garlic. Then the finished products will turn out more tender and juicy.
STEP 5

Mix chopped chickpeas, herbs and onions with garlic in a bowl.
STEP 6

Add spices to prepared foods. Let me remind you that you can vary their quantity, add only a portion, and then try. If there are not enough to your liking, add more. Pour a couple of tablespoons of cool water and add baking soda.
STEP 7

Mix the whole mass thoroughly and cover with a bag or lid. The resulting mass should sit on the table for about half an hour.
STEP 8

Add flour to the chickpea mixture. Mix everything evenly.
STEP 9

Wet your hands in cold water and start rolling the chickpea mixture into balls. You need to take a little mass so that the balls are small and easily fried in oil. When all the balls are ready, heat the sunflower oil in a frying pan or saucepan until very hot.
STEP 10

Place the chickpea balls in a frying pan and fry them on all sides over medium heat so that they do not burn ahead of time, but are completely cooked inside. Place the fried balls on a paper towel to absorb excess oil. Serve the finished falafel with fresh herbs and your favorite sauce. Bon appetit!
