STEP 1
How to bake chicken with pumpkin in the oven. Prepare the necessary ingredients. In addition to pepper and salt, you can use ready-made dry spices for chicken. In this case, be sure to read the ingredients. If there is salt in there, take that into account when salting the chicken. Choose pumpkin with thin skin and bright orange dense flesh. If desired, you can use any other vegetables to taste, as well as steamed prunes or dried apricots. Turn on the oven at 180 degrees.
STEP 2
Wash fresh chicken drumsticks and dry with paper towels. Transfer to a container. Salt, pepper, add mustard, stir and leave to marinate for 30 minutes. Take any mustard (French or regular) to suit your taste. If you use grainy ones, then fry the legs with a lid, otherwise the grains in the sizzling oil may shoot out of the pan.
STEP 3
Wash the pumpkin and cut it. Remove seeds and peel. Cut into medium sized cubes (approximately 2 x 2 cm).
STEP 4
Peel the garlic cloves and finely chop them with a knife. Wash the parsley, dry it with paper towels and chop it. Take cold butter from the refrigerator and cut it into small pieces, reserving some for frying the chicken.
STEP 5
Place the pumpkin in any heat-resistant dish with high sides. Salt it and pepper it to taste, spread the pieces of butter evenly. Bake the pumpkin for about 20 minutes until soft at 180 degrees. Stir the vegetable slices a couple of times while baking.
STEP 6
Heat the remaining butter and refined vegetable oil with a high smoking point in a frying pan.
STEP 7
When the butter has melted, add the chicken drumsticks. Fry them on all sides until golden brown. Since I used grainy mustard, I covered the pan with a lid.
STEP 8
Take out the pumpkin pan. Place fried chicken on top.
STEP 9
Sprinkle chopped herbs and garlic on top of the drumstick. Return to oven to bake for about 25 minutes more. Baking time and temperature may vary, as everyone's oven is different. Focus on the features of your technology. The flesh of the finished chicken will be easily pierced with a knife and clear juice should flow out. Serve the dish hot. Additionally, you can prepare mashed potatoes, baked potatoes or steamed rice. Bon appetit!
