STEP 1
How to bake chicken with avocado? Prepare all the necessary ingredients. Wash the chicken fillet well in running water and dry with paper towels. Wash avocados and tomatoes in running water and dry. STEP 2
Cut the chicken fillet lengthwise into two parts, 1 cm short of the edge.
STEP 3
Lay the fillet out like a book and pound lightly.
STEP 4
Place the chicken in a bowl, pour soy sauce on top, pat the fillets so that they are completely covered in the sauce and leave to marinate.
STEP 5
While the meat is marinating, peel the avocado and remove the pit. Cut the pulp into small cubes. Also cut the tomato (I have two because they are small) into small cubes. Finely chop the garlic with a knife or crush it with a press.
STEP 6
Wash the basil under running water, dry with a paper towel and finely chop with a knife.
STEP 7
Combine avocado and tomato in a separate plate. Sprinkle them with lemon juice to prevent the avocado from browning. Stir.
STEP 8
Add chopped basil and minced garlic to the vegetables.
STEP 9
Mix everything well.
STEP 10
Remove breasts from marinade and allow excess liquid to drain. Do not pour out the marinade - we will need it later. Stuff the breasts tightly with the prepared filling.
STEP 11
Secure the edges of the breasts with wooden skewers or toothpicks.
STEP 12
Place the breasts in a baking dish, pour over the remaining soy sauce after marinating and sprinkle with ground black pepper.
STEP 13
Bake the breasts in the oven for about 45 minutes at 180°C, periodically pouring sauce from the bottom of the pan over them.
