Chicken ramen soup
Step-by-step preparation
STEP 1
How to cook ramen soup with chicken at home? Prepare all the ingredients for the soup. If you have frozen chicken, remove it from the freezer in advance and defrost it. This time I used two small chicken legs at the rate of one leg per serving. Wash the eggs, hard boil and peel.
STEP 2
Wash the chicken, remove any remaining feathers, if any. Place the meat in a saucepan, cover with cold water and place on the stove. Bring to a boil over high heat.
STEP 3
At this time, peel the carrots, onions and garlic. Rinse the vegetables.
STEP 4
Carefully skim off any foam that has formed in the pan. Add the carrots and onions to the broth and reduce the flame to moderate. Cook the chicken until done with the lid half closed. It took me about 30-35 minutes.
STEP 5
Remove the finished meat from the pan and strain the broth. Cut the slightly cooled chicken into small pieces.
STEP 6
Pour soy sauce into the chicken broth, add chopped garlic, allspice, ginger powder and chili pepper. Stir and taste for salt. If necessary, add salt to taste. Return the pan to the stove and leave to warm up over low heat.
STEP 7
Boil the noodles in a separate pan.
STEP 8
Take a deep plate. Place the boiled noodles closer to one edge, as in the photo.
STEP 9
Place the chicken pieces on the other half.
STEP 10
Cut the egg in half and place on a plate. At this stage, you can add fresh soybean sprouts. I have used pickled vegetables for Asian soups.
STEP 11
Pour in the hot broth.
STEP 12
Sprinkle with sesame seeds and finely chopped green onions.
STEP 13
Homemade chicken ramen soup is ready to serve!
