STEP 1
How to cook soup with minced chicken meatballs? Prepare everything you need. Vegetables - peel onions, potatoes and carrots and rinse to remove dirt in running water. It is best to take steamed, long-grain rice. It doesn't get soft when cooked. For minced meat I use chicken fillet, you can make it from any part of the chicken or take it ready-made.
STEP 2
Pour the rice into boiling water and cook for 7-10 minutes over low heat until soft. Cooking time depends on the type of rice, so use the instructions on the package. Place the finished rice in a colander and rinse a little with cold water. For minced meat, pass the chicken fillet through a meat grinder.
STEP 3
In a spacious bowl, combine minced chicken and boiled rice. Add an egg, a little salt and spices. As a spice, I use a couple of pinches of ground pepper and dried dill. Mix the whole mass well until smooth.
STEP 4
Pour the soup water into the pan and bring it to a boil. Use your hands to form small meatballs and place them in the boiling water. Why boiling? In boiling water, the meatballs are “sealed” on all sides, harden and will not fall apart during cooking. Bring everything back to a boil. In this case, foam will appear, which must be removed with a slotted spoon or a spoon with holes.
STEP 5
Cut the peeled potatoes into small pieces and add to the pan with the meatballs. Bring to a boil, reduce the heat a little and leave to simmer.
STEP 6
While everything is cooking, start frying vegetables. How to make frying? To do this, finely chop the onion and grate the carrots on a fine grater. Pour a little vegetable oil into a hot frying pan and add chopped vegetables. Fry them, stirring occasionally, for 3-5 minutes over medium heat.
STEP 7
Add the prepared roast to the soup and stir. Add a little salt to the soup to taste. You can add bay leaf. Boil the soup for another 15 minutes and remove from heat. Cover the pan with a lid and let the soup brew a little (15 minutes).
STEP 8
Serve the meatball soup hot. Bon appetit!
