STEP 1

How to make crispy caramelized chicken legs in the oven? Prepare all the necessary ingredients. Take medium sized legs. The water must first be boiled; it will be needed hot.
STEP 2

If the chicken legs are frozen, defrost them in advance. Remove the packaging and place them in a container on the bottom shelf of the refrigerator the day before cooking. Rinse the legs under running water and dry. Excess moisture will make the caramel thinner. Using a skewer or toothpick, pierce the flesh of the leg in several places. This is necessary so that the syrup that we will prepare better saturates the chicken.
STEP 3

To prepare the syrup, take a small saucepan or saucepan with a thick bottom and pour sugar and salt into it. Boil water separately. When preparing caramel, you need to do everything quickly, so have water at the ready. Place the saucepan over high heat. There is no need to interfere yet.
STEP 4

When all the crystals darken and the sugar begins to turn brown and melt at the edges, turn the heat to medium and begin stirring gently. To prevent the caramel from burning, you can remove the saucepan from the heat while stirring.
STEP 5

Then you need to stir very quickly so that all the sugar melts and caramelizes.
STEP 6

Carefully, so as not to burn yourself, pour in water and bring to a boil. The caramel should be brown. Boil for 3-4 minutes.
STEP 7

Place the legs into a deep bowl. Pour caramel syrup on top. Mix well. Leave to marinate for 15-30 minutes. If the legs are not completely coated, stir them again during the marinating process.
STEP 8

Place the legs on a baking sheet or in a baking dish; you can line them with non-stick parchment. Brush the top with caramel syrup. If the syrup is too liquid, then after marinating, strain and simmer until slightly thickened. Bake in an oven preheated to 200°C for about 40 minutes. Select the exact time and temperature according to your oven.
