STEP 1
How to make chicken kebab on the grill? Prepare all the necessary products. For chicken kebab on the grill, you can use any part of the chicken. You can also cut a whole chicken into small pieces. Some people like their barbecue juicier - thighs and drumsticks are suitable here, some prefer crunchy - in this case, take chicken wings, and those who prefer minimal fat consumption - chicken breast, preferably without skin, is suitable for them.
STEP 2
Wash the chicken well in running water, then dry. I recommend using chilled poultry - it contains much more nutrients. If you take chicken breast, cut it into medium-sized pieces about 2-3 cm.
STEP 3
It is best to cut off the thinnest phalanx of the wings - there is practically only skin and bones, so this part very often gets very burnt.
STEP 4
If the chicken thighs are very large, I recommend cutting the thigh into two pieces. A thigh that is too large may not cook on the grill.
STEP 5
As a rule, drumsticks are not very large, so we will leave them as they are.
STEP 6
Place chicken in a large pot or container. Add lemon juice. If you squeeze juice directly from a lemon, wash it well with hot water first - this will allow the lemon to release more juice. It is also best to use a small sieve so that the lemon seeds do not get into the marinade. And of course, freshly squeezed lemon juice can be replaced with ready-made factory-produced lemon juice.
STEP 7
Salt the chicken meat.
STEP 8
Pepper it. Also at this stage you can add some other, your favorite spices and seasonings: suneli hops, fenugreek, thyme. Focus on your preferences!
STEP 9
Peel the onion and cut into thin rings or half rings.
STEP 10
Add to the bowl with the shish kebab.
STEP 11
Add mayonnaise. I recommend using homemade mayonnaise. At the end of the recipe you will find a link to recipes for homemade mayonnaise. It is also completely acceptable to replace mayonnaise with sour cream or some other fermented milk product.
STEP 12
Mix everything and leave to marinate for about 1 hour, but you can leave the marinade in the refrigerator overnight.
STEP 13
Light a fire. Birch firewood is recommended for cooking over coals.
STEP 14
Wash the skewers and anneal them over the fire. Wait until the wood burns out and there are hot coals.
STEP 15
Thread the chicken pieces onto skewers and place on the grill.
STEP 16
Turn the skewers quite often, at first every 2-3 minutes. The total cooking time on the grill is on average 30-40 minutes.
STEP 17
Serve delicious chicken kebab on the grill with fresh herbs and aromatic seasonal vegetables. Bon appetit!
