Chicken in sweet and sour sauce, Chinese style

STEP 1
How to make chicken in sweet and sour sauce in Chinese? Prepare all the necessary products. The traditional recipe usually uses chicken breast fillet, but it can also be thigh fillet or other parts of the chicken. Choose naturally fermented soy sauce. It's best if you can find a sauce that can be cooked or a marinade sauce.
STEP 2
Wash the chicken in running water, dry and cut into medium-sized pieces. Since the dish is Chinese, a piece of chicken should be easy to pick up with chopsticks.
STEP 3
Salt the chicken to taste, but keep in mind that soy sauce is also quite salty, so use half as much salt as you would for a regular dish. You can also pepper the chicken or add some other dried spices if you wish.
STEP 4
Add 3 tablespoons of starch to the chicken. It can be either potato or corn. Stir. Chicken pieces are breaded in starch.
STEP 5
Heat vegetable oil in a frying pan, add chicken pieces and fry on all sides for about 10 minutes. Then remove the chicken from the pan. For instructions on choosing a pan and oil for frying, see the separate articles at the end of this recipe.
STEP 6
Pour vinegar into the same pan where the chicken was fried. You can take not only apple, but also grape or wine vinegar. Or even regular 6% vinegar.
STEP 7
Then pour in soy sauce. Simmer everything over low heat.
STEP 8
Add sugar.
STEP 9
Then ketchup or tomato paste.
STEP 10
Peel the garlic, chop it with a knife, on a fine grater or put it through a press and put it in a frying pan, stir. I put the garlic through a press.
STEP 11
Bring to a boil over low heat.
STEP 12
Dissolve the remaining starch in a glass of cold water.
STEP 13
Pour into the pan.
STEP 14
Boil for a couple of minutes until thickened.
STEP 15
Return chicken to skillet and stir to coat. Leave for 10 minutes so that each piece is soaked in the sauce. Our dish is ready!

It turns out very tasty! You can serve with boiled rice. Bon appetit!
