STEP 1
How to make gulchekhra from chicken? Prepare the necessary ingredients. You can use any part of the chicken - chicken fillet, thighs, legs. Wash the meat, dry with paper towels, remove films, excess fat, and remove skin. Cut into small portions.
STEP 2
Peel the onions. Cut into small pieces. To prevent onion juice from irritating your eyes so much, rinse the onion and knife with cold water before slicing. If you rub a piece of lemon on your cutting board, it will not absorb the unpleasant onion smell. Peel the garlic cloves and pass through a press.
STEP 3
In a small container, combine flour with milk and stir until smooth so that there are no lumps. If lumps still form, rub the sauce through a sieve.
STEP 4
Pour vegetable oil with a high smoking point into a frying pan and heat well. There is a simple way to check whether the oil is hot enough. Dip a wooden spatula into it, if bubbles gather around, then you can begin the frying process. Add onion and garlic and fry over medium heat until golden brown.
STEP 5
Add chicken pieces to the pan. Fry everything together for 2-3 minutes over moderate heat.
STEP 6
Add sour cream to the chicken and mix well. Sour cream can be replaced with cream of any fat content or thick natural yogurt without additives. Remember, the calorie content of the dish will depend on the fat content of the products you use.
STEP 7
Pour the milk-flour mixture into the pan.
STEP 8
Add sugar, salt, suneli hops (optional) and pepper. Stir. If you decide to add ready-made chicken spices, be sure to read the ingredients before using. If there is already salt in the mixture, take this into account when you salt the meat, otherwise you risk over-salting.
STEP 9
Pour in warm boiled water or pre-cooked chicken broth. The liquid should completely cover the chicken.
STEP 10
Cover the pan with a lid and simmer the contents over medium heat for about 30 minutes. Before serving, sprinkle the dish with chopped herbs (green onions, dill). Any side dish is suitable - rice, pasta, buckwheat, potatoes or pickled, fresh, grilled vegetables, salads.
