Chicken chkmeruli in Georgian style (shkmeruli)

Spicy, juicy, with a crispy crust. Impossible to resist! Chkmeruli chicken in Georgian is incredibly tasty and aromatic. This recipe differs from the classic Tabaka chicken in the presence of a spicy creamy sauce with herbs and garlic. Adjika gives the dish bright spicy notes. Well, very tasty!

Step-by-step preparation

Cooking timeCooking time: 40 mins
  1. STEP 1

    STEP 1

Prepare the necessary ingredients for cooking.

  2. STEP 2

    STEP 2

Wash the chicken carcass under cold running water. Cut it along the breast.

  3. STEP 3

    STEP 3

Flatten it, cover with cling film and beat it well with a hammer.

  4. STEP 4

    STEP 4

For frying, it is best to use a cast iron skillet or a heavy-bottomed frying pan. Heat the butter in a frying pan and place the chicken carcass in it.

  5. STEP 5

    STEP 5

The chicken must be fried under pressure, for this I built such a structure. She placed a fireproof plate on the chicken, and on top, as a load, a pan filled with water.

  6. STEP 6

    STEP 6

Fry the chicken over medium heat under pressure for 15 minutes on one side. Then turn it over to the other side and fry for another 10 minutes. Then reduce the heat and fry for 20 minutes, also under pressure, turning the chicken periodically.

  7. STEP 7

    STEP 7

While the chicken is roasting, prepare the sauce. To do this, chop the cilantro and chop the garlic.

  8. STEP 8

    STEP 8

Combine garlic with chopped herbs, add salt, pepper and grind in a mortar.

  9. STEP 9

    STEP 9

Then add cream and water. Stir. The sauce is ready.

  10. STEP 10

    STEP 10

Now we check the chicken for doneness. To do this, pierce it with a fork, if the juice flows out pink, then continue cooking.

  11. STEP 11

    STEP 11

The chicken is fried, browned and ready. Now pour the sauce over the chicken.

  12. STEP 12

    STEP 12

Cover with a lid and simmer for 10-15 minutes.

  13. STEP 13

    STEP 13

That's it, our chkmeruli chicken is ready!!! You can serve it to the table!!! Before serving, garnish with herbs.

  14. STEP 14

    STEP 14

    Bon appetit!!!

It was interesting to try chkmeruli chicken in Georgian style. In the recipe photos it looks very appetizing. And the ingredients are simple. Preparing the chicken is quite simple - whole. I took half the chicken and fried it in butter under pressure. I did the press as recommended in the recipe: I placed a heat-resistant dish on top of the frying chicken, and a pan of water on it. When the chicken is well fried, add sauce with garlic, cream, salt, and a small amount of suneli hops to the pan. Instead of cilantro, I added frozen green onions. I stewed everything together for a while under the lid. I really liked the dish! The chicken turned out juicy, aromatic, and delicious! Wonderful recipe! I recommend to everyone.
