You can use chicken breasts with bone and skin or just chicken fillet. Depending on the size of the chicken breasts, there may be 3 or 4. I have large breasts, so there were 3 pieces.

    Add prepared mustard to the liquid honey and stir until smooth. You can use any mustard - Dijon, Russian, or make your own mustard from mustard powder. If your honey is heavily sugared, first melt it in a water bath or in the microwave.

    Wash and dry chicken breasts. If you have a whole bone-in breast, cut it in half. You can leave the skin or cut it off as you prefer. I removed the skin and cut out the bone.

    Sprinkle the chicken with spices, salt and pepper. When using a ready-made spice mixture, be sure to read the composition on the package. Often such mixtures already contain salt and pepper, take this into account, otherwise you risk oversalting and peppering the dish. My mixture did not include salt and pepper.

    Pour the honey and mustard mixture over the breasts. Leave the bird to marinate for 20-30 minutes at room temperature. If possible, you can marinate longer, but in the refrigerator.

    Place the chicken breasts in a greased baking dish and pour over the honey-mustard mixture from the bowl. Place the chicken in an oven preheated to 200°C and bake for about 30 minutes, periodically basting the meat with the juices from the bottom of the dish. The exact baking time depends on your oven and the size of the breasts. Meat with bones is baked a little longer than fillet. But it’s also important not to dry out the bird. Bon appetit!

I used the recipe for chicken breasts with mustard and honey in the oven to later make a salad. I took one breast weighing 300 g. For the marinade, I melted honey in a water bath, you can also do this in the microwave. I added homemade mustard; it’s not very spicy for me, but it’s fragrant and spicy thanks to the brine from homemade cucumbers. From the spices I took chicken seasoning, paprika and a little curry. I didn’t add a lot of salt, because the seasoning was salty enough. The marinade was thoroughly rubbed into the meat for better penetration and left in the refrigerator for three hours. Bake for 25 minutes until light juice appears from the puncture. I think the time depends on the amount of meat and the thickness of the pieces. I didn’t even expect that chicken breast in a honey-mustard marinade would turn out so juicy and tasty! Clear, sweet juice literally flowed out when cut. The mustard successfully balanced out the honey sweetness, and the curry aroma completed the picture. This is a very good recipe, I'll take note.
