    Scroll the peeled cherry pulp through a meat grinder or chop with a blender. Do this immediately in the container in which you will cook the berries. It should be wide so that the evaporation area is as large as possible.

    Place the bowl with the cherry mixture on the stove over high heat. Bring to a boil and simmer for about 40 minutes, stirring occasionally. If you are concerned that the mixture will burn on the bottom, reduce the heat.

    The soda will react and the mixture will turn green, don’t be alarmed! Keep stirring the jam and the color will turn red again.

We make cherry jam almost every summer, and this is understandable: a wonderful berry, loved by most. But I cook it a little differently and it turns out deliciously sweet! I never add water to jam or marmalade, much less soda. For what? The jam is cooked well, there is enough sugar in it, it will be stored well for a long time.

Indeed, it’s not very clear why soda is here. In my opinion, you don’t need anything other than cherries and sugar.
