Cherry jam with soda

Ingredients
Step-by-step preparation
STEP 1

How to make cherry jam? Measure out the required ingredients. Wash the cherries well, remove the branches and seeds. It’s better to do this with a special device, it will be faster. Otherwise, you will have to pick out the bones with a knife or look for a life hack on this topic on the Internet.
STEP 2

Scroll the peeled cherry pulp through a meat grinder or chop with a blender. Do this immediately in the container in which you will cook the berries. It should be wide so that the evaporation area is as large as possible.
STEP 3

Place the bowl with the cherry mixture on the stove over high heat. Bring to a boil and simmer for about 40 minutes, stirring occasionally. If you are concerned that the mixture will burn on the bottom, reduce the heat.
STEP 4

Add soda to the cherries.
STEP 5

The soda will react and the mixture will turn green, don’t be alarmed! Keep stirring the jam and the color will turn red again.
STEP 6

Add sugar and cook for another 40 minutes, but now definitely reduce the heat to low. And stir the future jam periodically! It should become moderately thick. You can check the degree of boiling drop by drop. Drop the jam onto the plate and see if the drop spreads or not.
STEP 7

Pour hot cherry jam into sterile jars and seal with boiled lids. You can sterilize jars, like I did, in the microwave. I pour water onto the bottom and sterilize for 2-3 minutes at 800 power.
STEP 8

Wrap the jars in a towel and wait until they cool down. Store at room temperature in any dark place.
STEP 9

Bon appetit :)
