Chard

A very healthy preparation, rich in vitamins K, E and A! Chard is a chard that is somewhat similar to spinach. For the winter it is harvested with stems, which come in different colors depending on the subspecies: white, yellow, green or red. An incredibly healthy and vibrant vegetable!

  1. STEP 1

    STEP 1

How to prepare chard for the winter? Prepare all the necessary ingredients specified in the recipe. If you take chard with multi-colored stems, then it will look very bright and appetizing in jars.

  2. STEP 2

    STEP 2

So, wash each leaf and stem thoroughly so that there is no dirt or dust left on the plant. This is very important because the preparation is made without sterilization, and therefore the chard and jars must be clean. Separate the leaves from the stems.

  3. STEP 3

    STEP 3

Rinse the leaves again under running clean water.

  4. STEP 4

    STEP 4

Chop the chard into small pieces. If you have large sheets, then fold two or three leaves together and cut them in half lengthwise.

  5. STEP 5

    STEP 5

Then cut each half lengthwise into two parts again.

  6. STEP 6

    STEP 6

And then cut crosswise into small pieces.

  7. STEP 7

    STEP 7

Place the chopped chard in a saucepan (preferably with a thick bottom). Cover with a lid and place on low heat.

  8. STEP 8

    STEP 8

Stirring occasionally, simmer the leaves until they change color and reduce in size by half.

  9. STEP 9

    STEP 9

Wash the jars and lids thoroughly and pour boiling water over them. Place the chard stems in a separate jar.

  10. STEP 10

    STEP 10

And distribute the leaves into small jars.

  11. STEP 11

    STEP 11

Prepare the marinade. Pour water into the pan, add peppercorns, salt and sugar. Bring to a boil over high heat, leave for literally a minute until all the bulk ingredients are completely dissolved. Pour in the vinegar and immediately remove the marinade from the heat.

  12. STEP 12

    STEP 12

Pour the boiling marinade up to the neck of each jar.

  13. STEP 13

    STEP 13

Close with lids. Turn the workpiece upside down and wrap it in a warm blanket or towel. Leave until the jars have cooled completely.

  14. STEP 14

    STEP 14

Pickled chard stems are delicious on their own as an appetizer.

  15. STEP 15

    STEP 15

And pickled leaves can be used for salads or added to soups.

They say that a person is young while he is learning something. I am an experienced pensioner, but I love to learn new things. I read about the benefits of chard and decided to prepare it for the winter according to the recipe on the website. It’s easy and quick to prepare, and the results turned out to be very cute jars. I can’t say anything about the taste, since winter is not coming soon. I am happy to prepare sorrel, garlic arrows, and now I’ll try foreign herbs. At the same time, I decided to entertain the readers a little with the story of Tsar Alexander III. A funny skirmish with the French occurred with the sovereign at one of the banquets. The conversation turned to gastronomic preferences, and the French ambassador asked the emperor: “Is it true that Russians eat buckwheat?” “Yes, of course,” replied Alexander III, who himself respected this food. The interlocutor, trying to appear polite, noted that in his country this cereal is only used to feed livestock. The Emperor, without hesitation, asked a counter question: “Is it true that in France they eat frogs?” The ambassador answered animatedly: “Yes, of course,” and was already preparing to talk about the delights of haute cuisine when he heard: “And even our cattle disdain this.” Let's see in winter what is closer to our hearts: sorrel or chard. Then the assessment will be truly deserved.
