Caviar from green tomatoes and bell peppers

I feel like Tosya Kislitsina when she listed what can be cooked from potatoes. And now I’m in a period when I’m preparing 100,500 dishes from tomatoes of varying degrees of ripeness) I found another good recipe for caviar made from green tomatoes. I was very pleased with the result, I tasted it in the morning and couldn’t stop) I cooked caviar for testing based on one kilogram of tomatoes. In the evening I grinded all the vegetables through a meat grinder and set them to cook. I simmered it for an hour over low heat, stirring occasionally to prevent it from burning. Then added salt, sugar, pepper, oil and vinegar. I didn’t add peppercorns so as not to get them on the tooth) I evaporated until almost all the liquid disappeared. Then she took it out into the cold and left it like that until the morning. But in the morning it was very tasty! I made sandwiches with loaf and black bread. The caviar turned out orange, apparently the carrots lost their color. It tastes almost like salted green tomatoes, only slightly sweeter. By the way, I added two teaspoons of salt to the whole mass, here you need to rely on your taste. I thought there was a lot of vinegar in the recipe and only used one teaspoon. I think if you add more it will be sour. I liked the caviar, now I know where else I can put green tomatoes)

Great use for overdue tomatoes! The recipe for green tomato caviar, unfortunately, does not indicate the amount of vinegar. But I took it as I usually do - 1 tbsp. spoon of 9% vinegar per liter. I also flavored it with red hot pepper - it turned out just fine. It turned out to be about 3 liters of caviar.
