    We are preparing food. We choose fresh cabbage, without dark or yellow spots, as well as other defects that indicate its poor quality and staleness. The head of cauliflower should be elastic with inflorescences tightly adjacent to each other. Also, when choosing this vegetable, pay attention to the leaves at the base of the head of cabbage - they should not be dry, spoiled or limp.

    We remove the leaves from the cauliflower, wash it and separate it into inflorescences. If they are very large, you can cut them into pieces. Boil the inflorescences in slightly salted water until soft - about 5 minutes after boiling. Remove from the water with a slotted spoon or place in a colander to drain excess liquid.

    Peel and chop the onion with a knife, peel and grate the carrots. Pour vegetable oil into the frying pan, heat it for a couple of minutes, then add the onion and fry it while stirring for two minutes. Next, add the carrots to the onion and fry everything together for another three minutes, also while stirring.

    Take fresh mushrooms, wash them and cut them into slices. Next, boil the mushrooms in slightly salted water until tender - about 5 minutes after boiling. Add mushrooms to onions and carrots. Simmer everything together for about ten minutes, stirring.

    After this, add cauliflower to the pan with the mushrooms and vegetables. Simmer the mushrooms and cauliflower until tender for about twenty minutes. At the end, add salt and pepper to taste. Add sour cream and butter. Simmer for another five minutes. At the end we add chopped greens.
