STEP 1
How to make Carrot Salad with Smoked Chicken? Prepare the necessary ingredients according to the list. You can replace smoked chicken with regular boiled or fried fillet. You can buy store-bought mayonnaise or make it yourself.

Boil the potatoes in their skins until tender, cool and peel. Then grate on a coarse grater.

Boil the carrots, cool, peel and grate on a medium or fine grater. If the carrots are watery, squeeze them out with your hands. How to cook carrots? Wash it and put it in a pan with cold water. Cook the carrots after boiling over low heat for 20-25 minutes, depending on the size. Check readiness with a sharp knife - it should easily pierce the carrots.
STEP 4
Hard boil the eggs, cool and peel. Then grate on a coarse grater. How to hard boil eggs? Place them in cold water and cook over low heat. Boil the eggs for 9 minutes after boiling, then cover with cold water and cool. The shell will be better cleaned from a sharp temperature change. If you wish, you can grate the whites and yolks separately and form them into two separate layers.
STEP 5
Remove skin and bones from the smoked breast and cut into small cubes. You can replace the breast with meat from smoked legs.

Shake the pickled cucumber off the brine and cut into small cubes. If the cucumber is too watery, squeeze out any excess moisture.
STEP 7
Place a layer of grated potatoes on a dish and shape it into a carrot. Sprinkle ground pepper on top of the potatoes and pour mayonnaise from a pastry bag.

Next, distribute the pickled cucumbers and also pour mayonnaise on top.

Place smoked chicken in an even layer on top of the cucumbers. You can also sprinkle it with ground pepper. Make a mesh of mayonnaise on top.

Next, distribute the grated eggs.
STEP 11
Cover the entire surface of the salad with grated carrots and smooth. To give the salad a greater resemblance to a fresh vegetable, use a silicone spatula to make shallow grooves in the carrot layer. Wash the parsley sprigs, shake off moisture and stick them in the place where the carrot tops should be. Before serving, put the salad in the refrigerator for 1 hour. Bon appetit!
