Carrot roll with mascarpone cheese

STEP 1
How to make carrot roll with mascarpone cheese? Let's wash and peel the carrots. Grate on a fine grater.
STEP 2
Beat the eggs with sugar until the volume increases by half. Add vegetable oil and beat for another 1 minute.
STEP 3
Add grated carrots to our mixture. Add flour with baking powder and salt. Mix everything well.
STEP 4
Pour our mixture onto a sheet covered with paper or, like mine, a silicone biscuit mat measuring 35 by 30 cm.
STEP 5
Place in the oven for 15 minutes at 180 degrees.
STEP 6
We take out the finished biscuit and turn it over onto a clean towel. And if you have paper, then remove the paper. And wrap the biscuit in a roll. I had a rug, I just rolled it up with the rug and left it like that until it cooled.
STEP 7
When the biscuit has cooled, make the cream. Whip the cream to peaks. And add mascarpone and powdered sugar. Spread the cream onto the biscuit. And roll it up.
STEP 8
Sprinkle the finished cheese roll with powdered sugar. Place in the refrigerator for 2 hours. Bon appetit.
