STEP 1
How to make a cake with sour cream and condensed milk? First of all, prepare the sponge cake. Prepare food for him. How to make a sponge cake? Take a bowl and break eggs into it. Add sugar. Beat eggs with sugar with a mixer until fluffy and light. Add sour cream, choose natural, high-quality, without vegetable fats. It’s better to let the fat content be 20% or higher.

Then add condensed milk. Choose high-quality, proven condensed milk. Without vegetable fats and food additives. The composition should contain only two ingredients: milk and sugar. The quality of the condensed milk will ultimately determine the taste and quality of the finished dish. Stir the egg mixture until smooth; this can be done not with a mixer, but with a spatula. Take soda, don’t be scared by the large amount - the dough turns out heavy, soda is needed to raise it.
STEP 3
Pour lemon juice or vinegar into the soda. As a result, a reaction will occur between the acid and alkali, releasing carbon dioxide, which will give the sponge cake its fluffiness. Pour slaked soda into the dough and stir.
STEP 4
Sift flour and cocoa into the dough. Sifting will not only remove possible debris, but will also enrich the food with oxygen, which will make the biscuit more fluffy and airy. Take natural cocoa, without additives; a drink like Nesquik will not work.
STEP 5
Mix the dough well until smooth.
STEP 6
Line a 24cm tin with baking paper. You can divide the dough into 3 parts and bake three cakes. I baked one.
STEP 7
Place the pan with the dough in an oven preheated to 180 degrees for 40-45 minutes. Check readiness with a toothpick - if it comes out dry from the center, the biscuit is ready.
STEP 8
Let the biscuit cool completely. Next, cut off the top a little. And in the future, use the sponge cake upside down. His bottom is always smoother, and therefore will be on top.
STEP 9
While the biscuit is baking and cooling, prepare the cream. How to make cream? Prepare your food. Choose natural cream, maximum fat content, 33%. Read the end of the recipe for tips on how to work with them. Take cottage cheese without additives. Whip the cream to stiff peaks. Add cottage cheese and condensed milk. Beat again. You get a lot of cream, so you can take half a portion.
STEP 10
Cut the biscuit into 3 parts. Try to make even cakes; I cut them with thread. I make cuts with a saw knife, and then pull the thread on both sides. Do the impregnation. How to make impregnation? Mix hot water with sugar and any liqueur. If children will eat the cake, replace the liqueur with syrup or jam. Let the impregnation cool.
STEP 11
Assemble the cake. Place the crust on a plate. As I already said, we place the top of the biscuit on the bottom. Soak it by pouring a few spoons of impregnation. Coat the cake with cream.

Do the same with the other cakes.

When the cake is assembled, coat it with cream on all sides. Do not skimp on the cream, the cake should turn white.
