STEP 1
I used pear jam for this cake, but you can use cherry, apricot, blackcurrant or any other. And you definitely need baking soda; baking powder is not suitable for dough. The remaining products are quite affordable: sour cream, eggs, sugar and flour.
STEP 2
First of all, through a sieve, separate the jam. The syrup will go into the dough, and the berries will be used for decoration. We need one glass of syrup.

Break 2 eggs into a large bowl, add sugar and beat with a mixer.
STEP 4
Without stopping whisking, add syrup.
STEP 5
Add soda and sour cream to the resulting mass. Beat with a mixer

A reaction of soda with acid must occur. The mass should be foamy.

Then add flour. Mix with a mixer.
STEP 8
Grease a frying pan with high sides with oil and sprinkle with breading. In my case, semolina plays the role of breading.

Pour the dough into the pan and put it in the oven. In order for the cake to bake and not burn, it is necessary to observe the temperature regime. I put it in the oven preheated to 200 degrees and after 10 minutes lowered the temperature to 180 degrees. The cake was baked for 50 minutes. I checked for doneness with a wooden stick.

Remove the cake and cool.

While the biscuit is cooling, prepare the cream. The sour cream for the cream must be homemade, full-fat. If you don’t have one, you can take a store-bought one, but first “squeeze” it out using a canvas bag and a sieve. Keep it in the refrigerator overnight and all the water will drain out. This kind of sour cream can be used in cream. In addition to sour cream, you will need powdered sugar.

Beat sour cream and powder with a mixer - we get a delicate cream.
STEP 13
Cut the cooled biscuit in half.
STEP 14
We get 2 cakes.
STEP 15
Grease the bottom cake with cream.
STEP 16
We fill it with jam berries.
STEP 17
Place the top crust. Cover the cake with the remaining cream.
STEP 18
Don't forget to grease the sides. Decorate the cake with berries and put it in the refrigerator.

My cake sat in the refrigerator for 6 hours. This time was enough for him to soak in the cream.
