    How to make a Spider Web cake? Prepare the necessary ingredients. You can replace butter with margarine. Jam (jam, marmalade) will suit any taste you like. Sour cream - any fat content. Use whole condensed milk for the cream, 8.5% fat. Wash the eggs and dry them with napkins.

    Let's start preparing the dough for the cakes. In a separate bowl, mash sugar with egg yolks. Melt butter or margarine in any way convenient for you. Cool it slightly.

    Pour the melted butter into the eggs. Add sour cream and mix well.

    Pour in the soda slaked with vinegar or citric acid (to do this, simply dissolve the soda in the vinegar). Start adding flour to the dough in parts. Please note that you may need more or less flour than I did. Focus on the consistency of the dough, not the volume of flour.

    Rub the dough until smooth. You should get a soft and elastic dough that molds well and does not stick to your hands.

    Divide the dough into 3 equal parts. Add cocoa to one part of the dough and knead it well. In total, you should have: one dark, chocolate part of the dough and two white ones. Cover the bowl with lumps of dough with film and place in the refrigerator for 30 minutes.

    Grease a springform pan with butter (mine is 24cm in diameter). Roll out one part of the chilled dough into a layer, then transfer it to the mold, spreading it over the entire circumference of the mold.

    Spread the top of the dough with jam or jam. Peel the walnuts and chop them with a knife.

    Sprinkle a layer of chopped walnuts on top of the jam.

    Roll the chocolate part of the dough into a sausage and divide it into 12 approximately equal pieces.

    Roll each piece into a ball, then knead into a flat cake in your palm. Place the filling in the middle of the flatbread. As you can see, I have dried apricots, but you can put any fresh berries, fruits, dried fruits. Blind the edges of the cake and roll it into a ball again.

    Place the chocolate balls in a circle on the first cake layer sprinkled with nuts.

    Start preparing the meringue. Beat 4 egg whites until foamy. Continuing to beat, add sugar in small portions. And beat until white at high speed.

    Pour the prepared meringue into the mold with the dough and smooth it over the entire surface. Place in the oven at 180 degrees for 45 minutes. Determine the exact baking time and temperature based on your oven. The meringue will rise during baking. If it starts to burn on top, cover the pan with foil. When the cake is ready, remove it from the oven and cool.

    Use the third part of the dough to also bake a cake. Roll it into a layer, transfer it to the mold and level it along the bottom of the mold. Bake at 180 degrees for 20 minutes (use your oven as a guide). Then remove, cool and soak in syrup mixed with water, or just water.

    Prepare the cream. To do this, beat softened butter with condensed milk with a mixer until fluffy. Start assembling the cake. Place the first cake layer (the one with meringue) on the bottom of a flat dish. Gently coat it with cream on top.

    Place the second cake layer (without the meringue). Also coat it with cream on top.

    Prepare the glaze. To do this, melt the chocolate in a water bath. Pour it into a pastry syringe or into a plastic bag with the end cut off. Draw a spiral on the cake using melted chocolate in a circle from the center to the edges. Then use a toothpick or the end of a teaspoon to draw lines from the edge of the cake to the middle.

    The result is a drawing - a cobweb. You can decorate the edges of the cake with chopped walnuts or cake crumbs.

wow, what a beautiful cake, an unusual recipe, I make almost the same one in a slow cooker, only easier. I love it when there is a lot of dried apricots, and I would sprinkle even more nuts. In the recipe, the cake is coated with jam, I think it will be too sweet, maybe I’m wrong, of course, I’ll try it and then I’ll understand for sure)

Marija034, thanks for the feedback. I also don’t have a sweet tooth and I don’t like the cloyingly sweet taste. I brushed the cake with apricot jam syrup, and the cake turned out moderately sweet. You can also make a nut layer when you spread cream between two cake layers. Post a photo of your cake later.

Elena, in Step 15 it says “soak with syrup mixed with water, or just water.” That is, the cooled cake will need to be soaked in syrup mixed with water. In about half a glass of water, stir 1 teaspoon of the jam or jam that you used, and soak the cake with this sweet water.
