After boiling, turn down the heat and cook the beets until tender. Cooking time depends primarily on the size, usually 40-60 minutes is enough. You can check readiness with a toothpick.

    Wash the jars and lids thoroughly and sterilize them in a way convenient for you. This can be done in the oven, microwave or in a water bath.

    Peel and rinse the garlic.

    Cut the cabbage into small pieces of approximately 3-4 centimeters.

    Prepare the marinade. Pour water, vegetable oil into a saucepan, add salt, sugar, bay leaf and peppercorns. Place on the fire, bring to a boil, pour in the vinegar and immediately remove the pan from the heat.

    Pour the boiling marinade into the jars to the very top. The contents of the jar may rise a little, but over time the cabbage will decrease in volume and everything will fit.

    Place a towel or napkin on the bottom of a wide pan, place jars of cabbage and fill with warm water up to the hangers. Cover the jars with lids and place over high heat. After boiling, reduce the flame and sterilize the workpiece for about 10-15 minutes.

    Carefully remove the jars from the pan and close the lids. Turn the cabbage upside down, wrap it in a warm blanket and leave until completely cool. Store the workpiece in a cool place.

I prepared cabbage and beets for the winter in jars. More precisely: in one jar))). I boiled the beets in advance. Used random amounts of beets, cabbage and garlic to fill the jar. But I made the marinade strictly according to the specified proportions. It took me almost 400 ml of marinade for a liter jar. I sterilized the jar of cabbage 15 minutes after boiling water in the pan. The result was a bright, appetizing, ruby ​​salad. I have no doubt that it will be delicious))).
