STEP 1
How to cook cabbage soup in chicken broth from cabbage? Prepare all the necessary products. You can use any part of the chicken for the broth. If you have it frozen, then remove it from the freezer in advance. You will learn all the subtleties of proper defrosting by reading the article about it at the end of the recipe. If desired, such cabbage soup can be cooked in any meat broth.
STEP 2
Wash the chicken well in running water - the better you do this, the less foam will form when cooking the broth. You can even soak the chicken in cold water for about 30 minutes and then drain the water.
STEP 3
Place the chicken in a saucepan, cover with clean water, then bring to a boil, reduce heat and simmer, constantly skimming off the foam, for 30 minutes. Do not make the fire high - it should be minimal, and it is better to cover the pan with a lid. How to choose a pan, read the article at the end of the recipe.
STEP 4
Remove the chicken from the broth using a slotted spoon. The broth is ready. You can use it immediately, you can use it the next day, or you can even freeze this broth.
STEP 5
Wash the carrots well using a brush, peel them - for this purpose it is best to use a vegetable peeler - it cleans the skin as finely as possible. Grate the carrots on a coarse grater.
STEP 6
Peel the onion and cut into cubes. To clean the onion better and not be too hot, pre-soak it for 20 minutes in cold water.
STEP 7
Heat vegetable oil in a frying pan, add onions and carrots into it, fry for about 7 minutes until the onions are golden brown. You can use any vegetable oil, but since we will use it for frying, you need to use refined oil.
STEP 8
Place the finished roast into the broth and cook over low heat.
STEP 9
Wash the potatoes in running water with a brush, peel, cut into medium cubes and also add to the pan.
STEP 10
Wash the cabbage, remove 2-3 top leaves and chop. Add to the pan with the remaining ingredients. Continue cooking over low heat. I would like to add that if you want to cook sour cabbage soup, then instead of regular white cabbage, use sauerkraut.
STEP 11
Peel the garlic, chop it and add to the pan. I put it through a press, but you can grate the garlic or cut it with a knife.
STEP 12
Trim the meat from the chicken from which the broth was made and return it to the pan. If you prefer soups without meat, you can skip this and use chicken as you wish. Cook for a total of about 20-25 minutes after you add the potatoes - this is how long it takes for the potatoes to be fully cooked. The exact time will depend on the potato variety.
STEP 13
At the very end, add salt to the soup.
STEP 14
Serve hot cabbage soup with sour cream. If desired, add finely chopped fresh dill or parsley. Bon appetit!
