STEP 1

How to make cabbage salad without sterilization for the winter? Prepare your food. White cabbage salad for the winter is best made during its ripening season. For the salad you need well-ripe and firm heads of cabbage. Then the salad will turn out delicious, the cabbage will remain juicy and crispy. Remove the top leaves from the head of cabbage, they are usually dirty and dry, cut it into two parts, remove the stalk. Finely chop the cabbage into strips.
STEP 2

Wash the carrots, peel and cut into strips. Or grate it on a coarse grater. In general, the easiest way is to chop the cabbage and carrots with a food processor; this will speed up the process of preparing the salad.
STEP 3

Peel the garlic cloves and finely chop them with a knife. Place all the vegetables in an enamel pan and stir.
STEP 4

Prepare the marinade for the salad. Pour clean filtered cold water into another pan, add sugar, salt, vegetable oil, bay leaf and black peppercorns. Place the pan on the fire, bring to a boil and simmer the marinade for five minutes over medium heat.
STEP 5

Pour the resulting marinade over the vegetable mixture, and also transfer the spices from the marinade into the pan with the vegetables. Turn on the heat and simmer the vegetable mixture over medium heat for 30 minutes. Then add vinegar and cook for another 5 minutes. Stir the vegetables occasionally to ensure they cook evenly. At the same time, rinse the jars of soda and sterilize them in a water bath or in the oven, in your usual way. Wash and sterilize the lids as well.
STEP 6

It is better to take small jars so that after opening the salad will not be stored for a long time. Place the finished salad in sterilized jars up to the shoulders, compacting the vegetables tightly. Pour the marinade over the contents of the jars so that it covers the salad, and immediately close or roll them up. Turn the jars upside down and cover them with a blanket. Leave it like this until it cools completely. Then store in a cool place.
