  1. STEP 1

    STEP 1

How to make cabbage salad with cucumbers for the winter? Prepare the necessary ingredients. Cabbage can be used both young and old. Wash the cabbage, remove the top leaves and chop finely.

  2. STEP 2

    STEP 2

Place the prepared cabbage in the pan in which it will be stewed. Pour in vegetable oil and 9% vinegar, add salt and sugar. Mix everything with your hands and squeeze a little so that the cabbage releases its juice.

  3. STEP 3

    STEP 3

Wash the carrots, peel and cut into thin strips about 3 centimeters long. Wash the cucumber, cut off the ends and cut it like a carrot - into thin strips 3 centimeters long. Peel the onion and cut into half rings. I have a large onion, so I cut a quarter into rings.

  4. STEP 4

    STEP 4

Place the prepared carrots, cucumbers and onions into the pan with the cabbage.

  5. STEP 5

    STEP 5

Mix everything well and evenly with your hands or a wooden spatula.

  6. STEP 6

    STEP 6

Place the pan with vegetables over medium heat and simmer for 5-7 minutes, stirring occasionally.

  7. STEP 7

    STEP 7

While the mixture is stewing, sterilize the jars and lids in a way convenient for you. I do it this way: I pour cold water into the kettle, lower the lids into it and place the jar for the future preparation. I put the kettle on the stove over medium heat. After boiling, I sterilize the jar for 5 minutes.

  8. STEP 8

    STEP 8

Transfer the finished salad from the pan into sterilized jars and seal with sterilized lids. Turn the jars over and cover them with a warm towel until they cool completely. Store the finished preserves in the refrigerator or other cold place. Happy preparations!

I know this recipe - it’s great! But I haven’t tried fermenting cabbage with apples yet.

Cabbage and cucumber salad for the winter is prepared very simply and quickly. I didn’t roll it into jars. This salad will simply be an addition to lunch or dinner. The cabbage salad with cucumber turned out to be light, refreshing, and tasty. In addition, it is also very beautiful and bright. The light taste of vinegar complements the cabbage perfectly. The onion is not very noticeable in the salad, but rather gives it some slight piquancy. Thank you very much for the recipe!
