Buns with sugar from rich yeast dough

Very tasty, aromatic, soft, airy, appetizing! Sugar buns made from rich yeast dough could be bought in any school canteen or bakery. Many people know them as Moscow buns. Even a novice housewife can prepare them at home - just try a little to give them a beautiful shape.

  1. STEP 1

    STEP 1

How to make buns with sugar from yeast dough? Prepare the food, everything should be at room temperature. I cook with fresh pressed yeast, you can use dry yeast, but you need three times less of it, i.e. 8 grams is enough. /take fast-acting ones that activate in warm water or milk, then the algorithm of actions will not change/. Leave 1 des.l of the total amount of milk. for greasing buns.

  2. STEP 2

    STEP 2

Preparing SOUND. Crumble the yeast into a deep enough cup and add a spoonful of sugar. Heat the water and milk /slightly warm 35' - 38'/. Pour in a small amount of water, grind the yeast to a smooth paste, add the rest of the water and milk. Stir well and leave for 15-20 minutes to activate the yeast. /A “cap” should appear, if it doesn’t, the yeast is inactive and needs to be replaced, otherwise you’ll just waste time and food/.

  3. STEP 3

    STEP 3

Melt the butter and let cool.

  4. STEP 4

    STEP 4

Mix the egg well and pour 1 tablespoon from the egg mass; it will be used to grease the buns.

  5. STEP 5

    STEP 5

Preparing DOUGH. Add the rest of the egg to the sugar, add salt, pour in the risen yeast mixture - stir everything.

  6. STEP 6

    STEP 6

Sift wheat flour with vanilla into a separate bowl.

  7. STEP 7

    STEP 7

Make a well in the flour, pour in the mixture of liquid ingredients, and knead the dough.

  8. STEP 8

    STEP 8

At the end of kneading, add cooled butter. Knead the dough for 7-10 minutes / grease the table and hands with a little vegetable oil /. The dough is ready when it becomes smooth and does not stick to your hands or the table.

  9. STEP 9

    STEP 9

Grease a clean bowl with vegetable oil, roll the dough into a ball and place in the bowl. Cover with film and a napkin, leave in a warm place to rise for 1-1.5 hours.

  10. STEP 10

    STEP 10

This is how the dough came together after 1 hour and 20 minutes. It is ready when it has increased in size by 2.5 times and is about to begin to fall off.

  11. STEP 11

    STEP 11

Lightly grease the table with vegetable oil, lay out the dough, lightly shaping it into a roll. Divide the dough into 16 pieces, about 60-63 grams per piece. Round each piece by tucking the dough down. Cover with film to prevent the dough from drying out.

  12. STEP 12

    STEP 12

Forming BUNS: Grease a table or mat with vegetable oil, lightly press a round piece of dough into a flatbread, easily roll out to about 0.5 cm thick. Brush the flatbread with soft or melted butter, sprinkle with sugar /about 3-4 pinches/.

  13. STEP 13

    STEP 13

Roll the flatbread into a roll. Fold the roll in half, leave the seam inside, pinch the edges. Cut the workpiece on the side opposite to the joint, making the cut not all the way through. Turn the bun cut side up and carefully smooth out the layers. This way we will get cute buns with a heart.

  14. STEP 14

    STEP 14

Place the buns on a baking sheet lined with parchment or on a mat. Form all the buns like this. Cover with film and leave to proof for 15-20 minutes. Whisk the remaining 1 tbsp. egg and 1 des.l. milk, gently grease the buns, you can sprinkle them with additional sugar.

  15. STEP 15

    STEP 15

Bake immediately in a preheated oven at 190 degrees for about 16 minutes, until golden brown. Cover the finished buns with a towel and let cool. While the first batch is baking, prepare 8 more buns in the same way and leave them to rise. The buns will increase greatly, leave enough space for rising. I got 2 large baking sheets.

I saw a photo of buns with sugar made from rich yeast dough and wanted to make them. For the dough I used dry instant yeast. I kneaded the dough as described in the recipe and let it rise. This was the first time I made buns of this shape, and thanks to the detailed description and photos demonstrating all the stages, everything worked out. The buns were well browned and were simply great for tea. Thanks to the author for the detailed recipe!

Greetings everyone! The recipe is correct! These buns are very tasty, easy to prepare and easy to eat too! But they are good when they are warm - soft, sweet, just a miracle! The only negative is that the next day they are already hard (I’m not saying that they become stale, no, no, they just harden). You just need to pour half a glass of water into a small baking sheet and put it on the very bottom, turn on the oven at 200 degrees, place the buns (as many as you need for this tea party) on a baking sheet with grease paper and put in the oven for 5-7 minutes (the time depends on the oven ). Then take them out of the oven and you can enjoy these wonderful buns again! My mother often baked buns like these!
