Buns with condensed milk cooked from yeast dough
Ingredients
Step-by-step preparation
STEP 1
How to make buns with boiled condensed milk from yeast dough? Take the highest grade flour, select large eggs. The butter should be at room temperature, so remove it from the refrigerator in advance.
STEP 2
Add sugar, salt and yeast to warm milk heated to a temperature of 37-40°C and stir thoroughly. Please note that this dough is kneaded immediately, so check the quality of the yeast first. Dissolve a pinch of sugar in 40 ml of warm water, sprinkle some dry yeast over the surface and wait until foam appears. If foam appears, it means the yeast is active and you can continue working with it.
STEP 3
Add eggs and mix again.
STEP 4
Add soft butter and sifted flour.
STEP 5
Knead into a soft, elastic, slightly sticky dough. If necessary, you can add a little more flour, but do not rush to flour the dough. Let it remain slightly sticky. The stickiness will go away as you rise and roll out the bun dough.
STEP 6
Cover the bowl with a towel and leave the dough to rise in a warm place for 1-1.5 hours.
STEP 7
Place the risen dough on a floured table and divide into 15-18 parts (I got 20 at once). Roll the dough into balls.
STEP 8
Now is the time to prepare the filling. You can buy boiled condensed milk from the store or brew your own can of regular condensed milk. You need to cook for about 2 hours over medium heat and make sure that the jar is always under water. If the water boils away, the jar will overheat and explode (which happens not so rarely))) It is better to cook the condensed milk in advance so that it has time to cool.
STEP 9
Roll each ball of dough into a rectangle 3-4 mm thick. Place 1 tsp on one edge. boiled condensed milk.
STEP 10
Tuck the long edges under the filling to prevent it from leaking out when baking. Roll the dough into a roll. Form the remaining pieces in the same way.
STEP 11
Place the buns on a baking sheet lined with oiled paper at a distance from each other and leave to rise for 25-30 minutes.
STEP 12
Now prepare the egg to brush the surface of the buns. You need to beat it with a fork so that the yolk mixes with the white.
STEP 13
And immediately prepare the crumbs for sprinkling the buns. The oil should be cold.
STEP 14
In a blender bowl, combine flour, sugar and cold butter. Beat everything into fine crumbs.
STEP 15
Brush the risen buns with beaten egg.
STEP 16
Sprinkle flour-sugar crumbs on top. Place in an oven preheated to 170°C for 25-35 minutes and bake until golden brown.
STEP 17
Bon appetit!
