  1. STEP 1

    STEP 1

How to make buckwheat bread? Prepare the necessary ingredients. You can use ready-made buckwheat flour or grind it yourself in a buckwheat coffee grinder.

  2. STEP 2

    STEP 2

Dissolve sugar in warm water heated to 37-40°C. Pour in dry yeast and leave in a warm place for 10 minutes until a fluffy cap appears on the surface.

  3. STEP 3

    STEP 3

If the cap still does not appear, then either the yeast is spoiled or the water is overheated and the dough will not rise.

  4. STEP 4

    STEP 4

Fry buckwheat, stirring, in a dry frying pan until a bright aroma appears.

  5. STEP 5

    STEP 5

Place the buckwheat in a bowl and cool.

  6. STEP 6

    STEP 6

Grind the buckwheat in parts in a coffee grinder. You can grind the cereal until it becomes a homogeneous flour or leave it in the form of tiny grains. It is important that the grains are not too large, otherwise they will crunch too much and spoil the impression of the bread.

  7. STEP 7

    STEP 7

Sift the wheat flour into a bowl. Add ground buckwheat and salt. Mix everything.

  8. STEP 8

    STEP 8

Pour in activated yeast and vegetable oil. Knead the dough thoroughly for about 10 minutes until it almost completely stops sticking to your hands. Add a little more flour if necessary.

  9. STEP 9

    STEP 9

Form the dough into a ball, place in a bowl, cover with cling film and leave in a warm place for 1 hour to rise.

  10. STEP 10

    STEP 10

The dough rises quite strongly and becomes fluffy.

  11. STEP 11

    STEP 11

Knead the dough and stretch it in different directions. Fold the two sides overlapping each other. In the same way, pull the dough in the other two directions and also fold in the other direction.

  12. STEP 12

    STEP 12

Form the dough into the desired shape.

  13. STEP 13

    STEP 13

I simply placed the dough into a long floured rectangular baking pan. Dust the top of the dough with flour.

  14. STEP 14

    STEP 14

Cover the mold with a napkin and leave to rise for 25-30 minutes.

  15. STEP 15

    STEP 15

If desired, you can use a sharp knife to make shallow cuts on the surface of the bread.

  16. STEP 16

    STEP 16

Preheat the oven to 200°C and place a baking tray with water on the bottom. Bake the bread for 25 minutes at 200°C. Then reduce the temperature to 180°C, cover the pan with a sheet of foil and bake for about 20 minutes. The exact time depends on your oven. The bread should have a light golden brown crust. Remove the finished bread from the mold and cool on a wire rack and serve. Bon appetit!

What an interesting bread! I also decided to make buckwheat bread in the oven. But I don’t have any buckwheat flour. Thank you, the author described in detail how to obtain flour from buckwheat. Following the steps in the recipe, I fried the buckwheat and ground it in a coffee grinder until it was dusty, so that there were no large grains. I made a dough from fresh yeast in the absence of dry yeast. I took 18 g of pressed live yeast. I kneaded the dough according to the recipe. It turned out incredibly tender and very fragrant. The dough was left to rise for an hour in a warm oven. I shaped the bread as described in the recipe. I just baked it in a round pan with a diameter of 20 cm. To be honest, I forgot to dust the bread with flour. I didn't want to make any cuts. I baked it for 40 minutes in the oven as described in the recipe. Fantastic smell! The aroma is magical! Real buckwheat bread! Homemade bread is so delicious that words cannot describe it. The crust is crispy, the crumb is dense and loose, the bread does not crumble when slicing. This recipe is something new for me! We were all delighted with the delicious homemade buckwheat bread. Very good recipe! I recommend it to everyone! Many thanks to the author!
