Step-by-step preparation

Cooking timeCooking time: 1 hr 45 mins
  1. STEP 1

    STEP 1

To prepare the sticks, we need flour (I used first-grade bread), warm milk, soft butter, hard cheese, honey or sugar, yeast, salt and fresh basil (instead of basil you can use green onions, parsley, dill)

  2. STEP 2

    STEP 2

Dissolve the yeast in warm milk (milk should be about 35-40 C no more) and leave for 5 minutes.

  3. STEP 3

    STEP 3

During this time, grate the cheese on a fine grater and chop the basil.

  4. STEP 4

    STEP 4

Add honey, grated cheese, chopped basil and butter to the yeast (I used half melted). Mix everything thoroughly so that the honey is completely dispersed.

  5. STEP 5

    STEP 5

Sift the flour with salt and add in several additions to the milk mixture. Knead soft dough. If necessary, add a little flour or milk during kneading.

  6. STEP 6

    STEP 6

Roll the dough into a ball.

  7. STEP 7

    STEP 7

Place the dough in a lightly greased bowl and leave in a warm place for 1 hour to rise, during which time the dough should increase in size by 2-3 times.

  8. STEP 8

    STEP 8

Place the risen dough on a floured work surface and stretch it into a rectangle about 5-8 mm thick.

  9. STEP 9

    STEP 9

Cut the dough into strips and form sticks. If you wish, you can either roll the dough strips into a tube or simply twist them into a spiral.

  10. STEP 10

    STEP 10

Place the resulting bread sticks on a baking sheet, grease them with milk if desired (this will make the color more saturated during baking, but this can be omitted) and place in an oven preheated to 200 C for 10-12 minutes (baking time depends on the thickness of the sticks, just be careful Be careful not to over-dry, otherwise you may end up with something like a crispy straw).

  11. STEP 11

    STEP 11

Let the finished sticks cool slightly and serve! Bon appetit!

I loved this recipe for Cheese and Basil Breadsticks. Only I used water instead of milk and dried basil instead of fresh. I grated a little more Gouda cheese than the recipe called for. I didn’t add all the flour, at first it even seemed that the dough turned out to be too dense and stiff (most likely due to the cheese included in it), but after proofing it became soft and pliable, just a little sticky to the hands, it was great to work with, without dusting the work surface with flour. Before baking, I greased the sticks with milk, as recommended in the recipe. There were a lot of sticks, on a standard-sized baking sheet they were located quite close to each other (if you place them less often, they will be better browned on all sides). The result was excellent cheese sticks, with a subtle taste of basil, crispy on the outside and soft on the inside. Such sticks can easily replace bread, especially when serving first courses. Very tasty, thanks for the recipe!
