Wash the beets in running water using a brush, peel them and grate them on a coarse grater.

Place all the chopped vegetables into the pan. Next, pour in vegetable oil, half a spoon of vinegar and water. Mix everything well. Place the pan on the stove, bring to a boil and simmer, covered, over low heat for 15 minutes. Periodically check the presence of liquid in the pan, it is important that the vegetables do not burn; if necessary, add a little water.
STEP 6
Wash the tomatoes in running water and grind in a blender. Instead of a blender, you can use a meat grinder, grater, or simply cut the tomatoes into small cubes. If you wish, you can first peel the tomatoes, I did not do this.
STEP 7
Place the chopped tomatoes in a saucepan with vegetables. Add sugar, salt, bay leaf, remaining vinegar and allspice, mix well. Return the pan to the heat and simmer the vegetables for 45 minutes, partially covered.
STEP 8

STEP 9
Immediately place the prepared borscht dressing into sterile jars and close the lids. Turn the jars upside down and wrap them in a blanket until they cool completely. Store the workpiece in a cool place. Bon appetit!
