  1. STEP 1

    STEP 1

How to make boiled smoked pork belly at home? Prepare the necessary ingredients. Choose fresh brisket that has not been frozen. The pulp should be pink, without any foreign odor. The lard should be white. The ratio of meat and lard should be approximately the same. You can take any spices to your taste. Choose large onions. To marinate meat, prepare a spacious bowl. Pour salt into it and add soy sauce.

  2. STEP 2

    STEP 2

Chop the bay leaf. Then cut the brisket into medium-sized pieces, rinse and dry. Place the pieces of meat in a bowl.

  3. STEP 3

    STEP 3

Add selected spices, red and black pepper.

  4. STEP 4

    STEP 4

Peel the onion, rinse under running water and cut into half rings.

  5. STEP 5

    STEP 5

Add chopped onion to the meat and mix everything well. Try to mash the onion with your hands so that it releases the juice faster. This way the meat will be better soaked and more flavorful. Leave the meat in this form to marinate for a day.

  6. STEP 6

    STEP 6

After 24 hours, rinse the meat, cover with water and leave for 1-2 hours. Then dry the meat and let it sit and dry. If possible. You can hang it outside.

  7. STEP 7

    STEP 7

Then place the brisket on the grill of the smokehouse. Pour some sawdust, for example, alder, into the bottom of the smokehouse and place the grill with meat in it.

  8. STEP 8

    STEP 8

The smokehouse should be above the fire. Our process looks like this. Cook the brisket in this form for about 40 minutes. The exact time depends on the size of the pieces of meat and the heat of the fire. Then remove the smokehouse from the heat and let stand for another 10-15 minutes. Remove the finished home-cooked smoked brisket from the smokehouse, cool a little and help yourself. Bon appetit!
