    How to cook pork tongue? Prepare all the necessary products. It is better to take the tongue chilled rather than frozen. If it was still frozen, then defrost it by transferring it from the freezer to the bottom shelf of the refrigerator. Do not take a very large tongue: the optimal weight is 250-300 grams. You can add other dried spices and seasonings to the bay leaf and pepper.

    Wash your tongue very well; a brush will do the best job. To remove a specific odor, soak your tongue in a pan of cold water for 12-20 hours. You can also add a spoonful of lemon juice to the water, this will speed up the process.

    Pour fresh cold water over the soaked tongue until it is completely covered. Add bay leaf and peppercorns.

    Wash the onion well and place the whole onion directly on your tongue. I didn’t peel the onions, I added them directly in the skins, this gave the tongue an extra flavor. Bring to a boil and cook over low heat for 1.5 hours under the lid, constantly skimming off any foam that forms. Do not salt the water at the beginning of cooking, salt it 10 minutes before the end of cooking, then the tongue will remain tender and juicy! If you have a large tongue, increase the cooking time.

    Remove the finished tongue from the pan and immediately pour cold water over it for 3 minutes.

    Due to a sharp change in temperature, the skin on your tongue will swell and you can easily remove it.
