    Choose beets that are juicy and sweet, I’m lucky - I have one from a new harvest. Wash the beets, boil or bake in foil in the oven until cooked. I cooked for two hours, since I have a large one, a medium one takes an hour and a half, and a small one for about an hour. You need to cook or bake in the skin so that the beets do not lose color; you can also add lemon juice to the water during cooking - 0.5 teaspoon per liter of water. Peel and cut into strips.

    Rinse the greens well, dry on paper towels and chop finely. I used cilantro, dill and parsley. I believe that it is these greens that make the salad truly Georgian.

    Chop the garlic in a way convenient for you, I chopped it very finely with a knife.

    Peel the onion, rinse and cut into half rings or, as I did, a little smaller. It is better to use red onion for this salad - it suits both color and taste.

    Place the greens, garlic, and onions in a bowl with the beets, add two tablespoons of tkemali sauce and two tablespoons of vegetable oil. Salt and pepper to taste.

I prepared beets in Georgian style for dinner with fish. I have medium beets, I boiled them for an hour, then poured cold water over them and left for 15 minutes. After this, the beets were well cleaned. At first, I also wanted to just cut the beet slices into strips. But I just bought a knife for curly slicing and decided to try it out right away. The result was very nice corrugated blocks) I think it turned out beautifully. Added red onion, herbs and garlic. I have homemade tkemali made from prunes, it tastes sweet and spicy with mint notes. After seasoning with salt, black pepper and vegetable oil, I tried the salad. There wasn’t enough sourness for my taste, so I added a teaspoon of lemon juice. Now the salad has become ideal, tasty and beautiful) It has all the necessary tastes: sour, sweet, spicy. And the beets themselves turned out to be elastic in consistency, not overcooked, which is what you need for a salad. I recommend everyone to try it!

Today I remembered that I haven’t cooked Georgian salad for a long time. And this salad is wonderful even during Lent. But, having a few problems with my teeth (they are at the treatment stage), I decided to grate it and chop all the other ingredients - greens, onions, garlic. Comrades, if you have normal teeth, it is advisable to prepare the salad as it is presented in the original!

I looked at the recipe for this salad and remembered that I had already tried tkemali sauce in the nineties. Real Georgian. Its trick is that coriander (cilantro seeds) is added to it. I prepared the salad according to the recipe and prepared the tkemali sauces myself. The salad turned out wonderful. Beets and plums are already on the market from a new harvest.
