    How to prepare beets for borscht for the winter? Prepare the necessary ingredients. During harvesting, vegetables are often left behind that are not suitable for harvesting and storing for a long time, but it would be a shame to throw them away. Such “obscene-looking” carrots and beets are perfect for storing for the winter. The only thing is that you cannot use rotten vegetables. Rinse the vegetables thoroughly under running water with a brush and place in a colander to drain the water.

    Peel the carrots. If you have young fruits, the skin can be rubbed off with a brush. Grate the carrots on a coarse grater. You can also use a food processor or other equipment to quickly chop the carrots.

    Also peel and grate the beets on a coarse grater or using a food processor.

    Peel the onion and finely chop it with a knife or also pass it through a food processor.

    Wash the tomatoes and cut out their stems. Cut the tomatoes into large pieces.

    Place the tomatoes in a bowl and puree with a blender. If you don’t have a blender, you can remove the skins from the fruits using boiling water and cut them into pieces with a knife.

    Pour vegetable oil into a large saucepan with a thick bottom and place chopped onions, beets and carrots in it. Mix everything thoroughly so that the vegetables are well saturated with oil. Pour half the amount of vinegar and water into the pan, stir and place on high heat. Bring the mixture to a boil, reduce heat to medium and simmer the vegetables for about 30 minutes.

    When the vegetables release their juice, add tomatoes, sugar, salt, spices (except bay leaves), remaining vinegar and water and stir. Cover the pan with a lid, bring the vegetable mixture back to a boil and simmer over medium heat for about 20 minutes. Then add the bay leaf, mix everything and simmer the vegetables for another 10 minutes. Sterilize the jars and lids in advance.     Divide the dressing into jars. Immediately roll them up with lids and leave them upside down at room temperature under a blanket until they cool completely. Store borscht dressing in a cool place for the winter. Bon appetit!

I rolled up several jars of beets for borscht for the winter. I like such preparations, they help to quickly and without hassle prepare a delicious hot soup. After washing and peeling the vegetables, I grated the beets and carrots on a coarse grater, and cut the onion into small cubes. Grind the tomatoes in a blender. Next, I prepared the borscht dressing according to the steps in the recipe. When I started rolling up the jars, I decided to leave one half-liter jar for food and cook borscht. It took half a jar for a small saucepan. The borscht came out wonderful, tasty, rich, very beautiful and bright, the balance of salt, sugar and acid was excellent! Thank you very much!

The recipe is good and necessary, but I just put the tomatoes, beets, carrots and onions together with salt and sugar. No vinegar, just the acid from the tomatoes. I put the vinegar when I cook the borscht. Just look at how the word “grate” is spelled correctly, otherwise it’s funny to read!

I'll have to try this option too. In your opinion, is it possible to do without carrots, replacing them with another kg of beets? My husband doesn't like carrots)

The recipe is wonderful. A wonderful way to preserve beets for the winter and borscht is a favorite dish for the whole family. Only in this recipe, like in many others, the weight of the product in dirty or peeled form is not written.
