  1. STEP 1

    STEP 1

In this recipe I will tell you how to preserve beet caviar for the winter. We will need the products listed.

  2. STEP 2

    STEP 2

Peel beets, carrots and onions and pass through a meat grinder or scroll in a food processor.

  3. STEP 3

    STEP 3

    Mix everything very well.

  4. STEP 4

    STEP 4

Transfer the resulting vegetable mass onto a sheet or into a mold, cover it with foil and simmer in a not very hot oven for one and a half to two hours.

  5. STEP 5

    STEP 5

Then put the mass in a frying pan with heated vegetable oil, add salt and pepper, and fry over low heat, stirring constantly, for another 30-40 minutes.

  6. STEP 6

    STEP 6

Then add tomatoes, peeled and diced, and vinegar. Fry for another 10-15 minutes. To easily peel the tomatoes, you need to make a cross-shaped cut on the bottom of each and pour boiling water over the tomatoes. After this simple procedure, the skin will easily separate from the pulp.

  7. STEP 7

    STEP 7

Place the finished caviar in dry sterilized jars, cover with lids and sterilize in a steam bath. Half-liter jars - fifteen minutes, liter jars - twenty minutes.

  8. STEP 8

    STEP 8

We roll up the lids, turn the jars upside down and wrap them in a blanket to cool slowly. Don't forget to leave some for testing!

We prepared this beet caviar recipe for the winter over the weekend! I had 3 large fruits, I showed the rest of the products in the photo. It turned out to be about 1 liter of finished caviar. We prepared borscht and closed 1 jar. This dressing can be used as a side dish for meat or as a meal on its own, because it turns out very tasty with a delicate consistency. Vegetables were stewed in a frying pan for about 40 minutes until cooked. If the mixture becomes dry during the stewing process, you can add boiling water. The recipe is simple, be sure to try it!

Such an appetizer would also be appropriate on a holiday table! I think the sandwiches will turn out great. But I want to experiment and add a little garlic to make it spicier (our family really loves fresh beets with garlic and mayonnaise) But here is a recipe for spicy caviar in general

I heard that raw beets do not retain their beneficial properties all year round. Our accountant at work says that by spring beets are almost poisonous, so you can only eat them in the fall, when they are freshly picked. and for the rest of the time, beets need to be harvested for future use. so, according to our accountant, this recipe for preparing beets will be just right. And in any case, it's delicious. I need to cover myself too!

Fiesta, your accountant is partially correct. As far as I know, the closer to spring, the thicker the layer of peel. you need to remove it from the beets. But to completely refuse - nope, not about us)
