STEP 1

How to make beef with pumpkin in the oven? Very simple! To begin, prepare the necessary ingredients according to the list. You can replace beef with veal. You can add vegetables to your taste. You can replace the water with meat or chicken broth. You can replace some of the water with white wine.
STEP 2

Cut the beef pulp into portions. Beef needs no bones and large hard veins, only pulp. Wash the meat, be sure to dry it with a paper towel, otherwise excess moisture will not allow it to fry - it will stew. You can take meat from any part of the carcass. I have a hip part.
STEP 3

Peel the pumpkin and cut into large pieces, but smaller than the meat.
STEP 4

Heat vegetable oil in a frying pan over medium heat. Add pumpkin and fry, stirring, for 3 minutes. The pumpkin should retain its shape, but become a little softer. Transfer pumpkin to a bowl.
STEP 5

Place the beef in the frying pan where the pumpkin was fried and fry over high heat until golden brown. Transfer the fried meat to the pumpkin.
STEP 6

Sprinkle beef and pumpkin with coriander and paprika. Salt, pepper and mix everything.
STEP 7

Transfer the meat and pumpkin to a baking dish. Pour hot water or broth into the mold. Scatter rosemary sprigs on top.
STEP 8

Cover the pan with a lid or cover with foil. Place the pan in an oven preheated to 180°C for 15-20 minutes. Then remove the foil and bake the meat and pumpkin for about another 15 minutes or a little longer until the meat is soft.
STEP 9

Sprinkle the baked beef with pumpkin with fresh parsley and serve. Bon appetit!
