STEP 1
How to make beef stew with potatoes in a cauldron over a fire? Prepare all the products indicated in the recipe. The amount of each ingredient can be adjusted to your taste. Cut the beef into medium-sized pieces.
STEP 2
Peel potatoes, carrots, onions and garlic. Wash the potatoes and cover with cold, clean water. This is necessary so that the potatoes do not darken. Of course, the tubers can be peeled immediately before putting them in the cauldron, but being in nature, it is more convenient for me to prepare all the vegetables a little in advance. Cut the bell peppers in half, remove the core, seeds and stalks. If possible, choose peppers of different colors. Wash all vegetables well.
STEP 3
Cut the carrots and bell peppers into cubes, and the onion into half rings or a little smaller. Leave the small garlic cloves whole, and cut the larger ones into 2 or 4 pieces.
STEP 4
Place a clean, dry cauldron on the fire. Pour in odorless vegetable oil and heat well. Using a slotted spoon, pour hot oil over the edges of the cauldron, be careful not to burn yourself! Send the onions, carrots, peppers and garlic to fry. Cook over high heat, stirring constantly, until the vegetables smell delicious and turn golden brown.
STEP 5
Using a slotted spoon, remove the fried vegetables from the cauldron. The oil is saturated with the aromas of the vegetables, you can proceed to the next step.
STEP 6
Place the beef pieces into the cauldron. Stirring constantly, fry until golden brown. Pour water into the cauldron so that it covers the meat. After boiling, skim off any foam that has formed. On high heat, water boils very quickly. Cover the cauldron with a lid, remove several logs from under the cauldron so that the flame becomes moderate and simmer the meat until soft. It took me about an hour and a half.
STEP 7
Periodically open the lid and check whether there is enough liquid in the cauldron and whether the beef is not burning. If necessary, add a little water. At this time, prepare everything else. Cut the tomatoes into 4-6 slices (depending on the size of the tomatoes). You can peel the tomatoes first; I leave the skin on, so the pieces retain their shape longer during cooking. You can use cherry tomatoes.
STEP 8
Wash and dry the greens. What greens are best to use? Young green onions, dill, cilantro, parsley, garlic, etc. are good for this dish.
STEP 9
Finely chop the greens and a couple of cloves of garlic.
STEP 10
When the beef stew is almost ready, add some wood under the cauldron. Add potatoes and fried vegetables to the meat.
STEP 11
Then add tomatoes, bay leaves, salt to taste and sprinkle with your favorite spices.
STEP 12
Pour enough water to cover the potatoes. In general, the amount of water, of course, can and should be adjusted as desired, depending on how thick you want the dish to be.
STEP 13
Mix everything well, wait until it boils, then reduce the flame, and simmer the potatoes under a half-closed lid until cooked (about 20-30 minutes).
STEP 14
At the end of cooking, add the greens to the cauldron. Leave the lid open and simmer the dish on almost burnt wood for some time. Potatoes with meat will be saturated with the aromas of the fire and will become incredibly tasty!
STEP 15
You can invite your family and friends to the table before the dish gets cold!
