STEP 1
How to make a Bee cake? Prepare your food. If possible, choose liquid, natural and high-quality honey. Butter - without vegetable fats, in accordance with GOST. You can take boiled condensed milk for cream ready-made or cook it yourself.
STEP 2
Start preparing the cake by baking the layers. How to make cakes? Take a heatproof bowl (it will need to be placed in a steam bath), beat the eggs into it. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush. Add sugar to the bowl with eggs.
STEP 3
Beat them lightly with a whisk.
STEP 4
Then add honey, butter and soda to them.
STEP 5
Mix everything with a whisk and place in a steam bath. How to make a steam bath? Take a saucepan of a suitable size (smaller in diameter than the bowl of food) and boil water in it. There should be enough water so that the bottom of the bowl placed on the pan does not touch it. As soon as the water boils, reduce the heat to low.
STEP 6
Cook the mass in a bathhouse, stirring continuously until the mass doubles.
STEP 7
As soon as this happens, remove the mass from the stove and pour the sifted flour into it. It is important to sift the flour to saturate it with oxygen. Then the baked goods will turn out airy and rise well during baking.
STEP 8
Knead the dough. First mix it with a spoon, then with your hands. The dough will immediately be a little sticky - that’s okay, it will lie down for a while, “rest” and stop sticking to your hands, it will roll out well.
STEP 9
Cover the dough with cling film and let it rest and cool.
STEP 10
When the dough is slightly warm, continue working.
STEP 11
Roll out the cakes. You can roll it out directly on parchment, dusting it with flour. I have a silicone baking mat, I rolled right away on it. Divide the dough into small pieces and roll them into balls.
STEP 12
Roll out the cakes into a thin circle, no thicker than 5 mm (they will still rise). Using a plate of the desired diameter, trim off the excess dough. We will then bake the scraps to top the cake. Place the cake on paper or a mat onto a baking sheet.
STEP 13
Prick the crust a little with a fork so that it rises evenly during baking. Bake it in the oven at 200°C for 5-7 minutes until golden brown. The cakes bake quickly (check your ovens for details).

Stack the finished cakes to cool. At the very end, bake the cake scraps.
STEP 15
While the cakes are cooling, make the cream.
STEP 16
How to make cream? Combine sour cream, boiled condensed milk, white condensed milk and honey. Sour cream is suitable for any fat content; the fattier it is, the tastier it will be, but the higher the calorie content. If your sour cream is too liquid, weigh it out in gauze overnight. Choose high-quality, proven condensed milk. Without vegetable fats and food additives. The composition should contain only two ingredients: milk and sugar. The quality of the condensed milk will ultimately determine the taste and quality of the finished dish.
STEP 17
Beat the ingredients with a mixer until smooth and fluffy.
STEP 18
Divide the cream into 2 parts. The larger part is for the cake itself, and the smaller part is for the top of the cake.
STEP 19
Lubricate the cakes with most of the cream. Place the prepared cake in the refrigerator.
STEP 20
Prepare gelatin cream to decorate the top of the cake. To do this, soak the gelatin in milk for 10 minutes until it swells. It’s better to do this right away in a small saucepan.
STEP 21
While the gelatin is blooming, chop up the baked scraps to coat the sides of the cake. You can do it in a blender, you can do it in a mortar or with a rolling pin.
STEP 22
Meanwhile, the gelatin will swell well.
STEP 23
Place the saucepan on the stove over low heat and, stirring constantly, bring the gelatin until completely dissolved.
STEP 24
Cool the gelatin mass slightly, 1-2 minutes, and, stirring gently, add it to the cream that was left for the top of the cake. This is the liquid consistency you will get. Don't worry, that's how it should be.
STEP 25
Fill the top and sides of the cake with gelatin cream and smooth it out with a spatula. Then sprinkle the sides with chopped trimmings.
STEP 26
To form honeycombs you will need a film with pimples.
STEP 27
Place it on the top of the cake, pressing slightly over the entire surface so that the bubbles seem to be pressed into the cream. Let the cake harden overnight in the refrigerator.
STEP 28
Make bees for decoration. Grind the cookies into fine crumbs.
STEP 29
Add soft butter, sugar, cocoa powder to it. Knead this mass well.
STEP 30
Make these “sausages” out of it. These will be the bodies of the bees. Place them in the freezer for 10-15 minutes. Then put it in the refrigerator.
STEP 31
Insert halves of nuts into the bodies of the bees - these will be wings. With almond petals, the bees will become completely realistic.
STEP 32
Remove the cake from the refrigerator and very carefully remove the film.
STEP 33
Decorate the cake as you wish. I planted the bees near the jelly raspberries and decorated them with raspberry leaves. Bon appetit!
