Delicious and nutritious bean cutlets are almost like meat! From the first bite, it’s even difficult to distinguish bean cutlets from meat cutlets by taste. They turn out just as dense, tasty and satisfying, however, the minced beans are a little dry and crumbly, so when frying you need to add more vegetable oil, then they will turn out juicy and strong.

    To prepare the bean cutlets, prepare the ingredients. The beans need to be soaked overnight so that they swell well. You can use absolutely any beans: red or white, depending on availability. Color does not affect the quality of cutlets. Breadcrumbs can be purchased at the store or ground through a coffee grinder from regular breadcrumbs.

    Rinse the beans thoroughly, cover with water, and leave overnight. Rinse the swollen beans thoroughly again, cover with cold water and put on fire. Cook for about 40 minutes, add salt at the end of cooking (add salt to taste). Cook for about 5 more minutes. Turn off the heat, drain the water, but not all of it, leave some of the broth.

    Peel the onions and carrots. Finely chop the onion and grate the carrots.

    Heat vegetable oil in a frying pan. Place onions and carrots on it, fry until lightly browned.

    Transfer the roasted vegetables to the pan with the beans. Add spices to taste: salt and ground black pepper. If desired, you can add some greens.

    Using a blender, turn the contents of the pan into minced meat. Pour breadcrumbs into a plate. Take the minced beans with a tablespoon, place it in a plate with breadcrumbs and form a cutlet. Make the cutlets not very thick so that they are well saturated with oil during frying and do not crumble. The beans take as much oil as needed, distribute it throughout the entire mass, so there is no need to be afraid that it will turn out greasy.

    Pour vegetable oil into the frying pan. Place the finished cutlets. Fry for about 20 minutes until the cutlets are browned on both sides. Carefully remove the cutlets to a plate. Serve with fresh vegetables and sour cream as a separate dish or as an addition to meat. It turns out very tasty. Bon appetit!

I decided to make bean cutlets. I didn’t get any cutlets, but that’s my “merit”))), for juiciness, I increased the amount of frying and the minced meat turned out to be a bit runny; when I turned it over, the first portion of cutlets fell apart... I liked the taste of the minced meat, so I added a little to one part grated garlic - this will be a spread for sandwiches. I beat an egg into the second part, added a teaspoon of starch just in case, and started frying the pancakes. The bean pancakes turned out excellent, soft, tender and tasty. In general, the author’s idea is wonderful! You can prepare cutlets and pancakes (increasing the amount of carrots and onions, egg and starch) and a spread for sandwiches.
