    How to make a herb dressing for new potatoes in their skins? Take parsley, dill and thyme (these herbs were used in the recipe, but you can take and combine absolutely any other herbs), wash in running water, dry, chop as finely as possible. Chop the shallots and peeled garlic using a knife. Instead of shallots, you can use young green onions.

    Add 2 tablespoons of vegetable oil and mix everything. While stirring, press on the greens and onions to release their juice, this will make it much more flavorful.

I really love oven-baked small potatoes with their skins on whole! I always wait for the first new potatoes and bake them with different spices. Following the recipe, I pricked all the tubers with a toothpick, my daughter enthusiastically helped me with this) It turns out that mixing potatoes with spices and oil is very convenient if you use a bag for this. And your hands are clean) The potatoes were all covered with marinade and left for about 20 minutes after that. I baked it in a glass form. The potatoes don't burn in it, so I didn't use parchment. I baked it as written in the recipe for half an hour and 10 minutes under the grill. The potatoes turned out excellent, golden, rosy, spicy! And for the dressing I mixed green onions, dill and unrefined mustard oil. I put it on top of still sizzling potatoes, the aroma is indescribable! Delicious!
