Small new potatoes in the oven, whole in their skins

STEP 1
How to bake small new potatoes in the oven with their skins on whole? Prepare all the necessary ingredients.
STEP 2
The skin of new potatoes is very soft and thin, so there is no need to peel it. Wash the potatoes thoroughly with a brush under running water. Place the tubers on paper towels or a clean kitchen towel to dry.
STEP 3
Using a toothpick, make several holes in each potato. This is necessary so that the marinade is better absorbed.
STEP 4
How to make a marinade? Pour 2 tablespoons of vegetable oil into a small container, add ground red and black pepper, and salt to taste. You can also add a pinch of hot chili pepper and any other spices you like. Mix everything thoroughly with a fork or teaspoon.
STEP 5
Peel the garlic and pass through a press. Add garlic to the marinade and mix everything again.
STEP 6
Place the potatoes in a plastic bag.
STEP 7
Pour the marinade on top. Tie the bag and mix the potatoes with the marinade. This way it will be evenly distributed over all the tubers.
STEP 8
Leave the bag of potatoes to marinate for 10-15 minutes.
STEP 9
Line a baking dish with baking paper. Spread the potatoes evenly in one layer and place in a preheated oven for 30 minutes at 190°C, top-bottom mode. Next, change the mode to convection, increase the temperature to 200-210 degrees and bake until the potatoes are browned (about 10 minutes). Time and temperature are approximate, refer to your oven. STEP 10
How to make a herb dressing for new potatoes in their skins? Take parsley, dill and thyme (these herbs were used in the recipe, but you can take and combine absolutely any other herbs), wash in running water, dry, chop as finely as possible. Chop the shallots and peeled garlic using a knife. Instead of shallots, you can use young green onions.
STEP 11
Add 2 tablespoons of vegetable oil and mix everything. While stirring, press on the greens and onions to release their juice, this will make it much more flavorful.
STEP 12
Remove the finished potatoes from the oven (you can check readiness with a toothpick; it should easily pierce the tuber). Pour the flavorful dressing on top.
STEP 13
Using a large spoon, gently toss the potatoes and dressing together.
STEP 14
Delicious new potatoes in their skins are ready, ready to serve!
