Please explain to me how cream can be low-fat? And lemon juice is in the recipe, the milk will curdle...

You can see from the photo that nothing was curled up. Why empty questions? Skim cream is buttermilk. If this is the first time you've heard about such a product, it doesn't mean it doesn't exist!
