Healthy and most importantly tasty Armenian dish). Flatbread with herbs is definitely a very tasty and healthy thing. Typically, the filling for Armenian flatbreads consists of 30 different herbs, but such herbs are quite difficult to find. The following herbs can be used in the filling: spinach, green onions, cilantro, dill, nettle, sorrel and parsley. In my scones I used sorrel (it gives a pleasant acidity), green onions, nettles and parsley. It turned out very tasty - even the child liked it. I advise everyone to try it.

    Let's start preparing the dough. Mix flour with half a teaspoon of salt and add water. Knead the dough into a tight dough, like dumplings. Mix well and leave for 30 minutes at room temperature.

    Finely chop all the greens. But first you need to scald the nettle with boiling water so that it does not burn.

    We form cakes from the resulting dough. I got 5 pieces.

    Place a fifth of the greens in the middle of the flatbread, sprinkle with salt and ground black pepper.

    Carefully pinch the edges of the cake. Thus, we form all 5 cakes.

On a sunny spring morning I wanted to cook something simple but tasty for breakfast. I found a recipe for Armenian flatbreads with herbs on my favorite website. I chose this recipe mainly because it contains nettle, I really wanted to taste it) We just took nettle bushes for planting and I plucked the young greens from them. I worked with nettles wearing rubber gloves; it stings a lot. On the author's advice, I scalded her with boiling water. From the greens I also took dill, green onions and wild garlic. The dough is simple, I kneaded it easily, although I needed a little more water. I put the bun in a bag so it wouldn’t get airy and left it on the table for half an hour. There were no problems with forming the cakes; I pressed them down a little with my hands to make them flatter. Immediately after frying in a dry frying pan, the flatbreads were dry and hard, but after brushing with oil they became soft. I replaced the oil with vegetable oil to make the dish lean. The flatbread tastes like thin lavash. I was very pleased with the filling, it was so juicy! The combination of unleavened simple dough and moist green filling is very successful. The flatbreads are incredibly tasty, we ate them all at once with the children)
