  1. STEP 1

    STEP 1

How to make Armenian baklava? First of all, prepare the dough. How to make the dough? Place sour cream, softened butter, cut into pieces, into a deep bowl, then beat in the chicken eggs. Choose good quality sour cream and butter; they should be natural, without milk fat substitutes. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria.

  2. STEP 2

    STEP 2

Mix everything until smooth using a whisk or mixer. Then add the sifted wheat flour, combined with baking powder, in parts. It is important to sift the flour to saturate it with oxygen. Then the baked goods will turn out airy and rise well during baking.

  3. STEP 3

    STEP 3

Knead into an elastic, smooth and manageable dough. Wrap the dough in cling film and put it in the refrigerator for half an hour. The texture should be like sand, and the quality should be like puff pastry.

  4. STEP 4

    STEP 4

Next, prepare the filling. How to make the filling? Rinse the walnuts thoroughly and dry in a dry frying pan. Leave some of the whole walnut halves for decoration, place the rest in a blender bowl and grind into fine crumbs. You can add peanuts and almonds to the filling, the taste will be more interesting. Add sugar and cinnamon to the nuts and turn on the blender for another minute. The filling is ready.

  5. STEP 5

    STEP 5

Prepare the filling. How to fill? Pour sugar into a suitable container and pour in water. Put it on the fire to cook, constantly stirring the mixture during the process. When the sugar dissolves and the syrup begins to thicken, add honey. There is no need to cook the mixture with honey for a long time so that it does not lose its beneficial properties. Stir until the mixture becomes homogeneous and immediately turn off the heat. Melt the butter in any convenient way and cool.

  6. STEP 6

    STEP 6

Remove the dough from the refrigerator and divide it into four parts.

  7. STEP 7

    STEP 7

Roll each into a thin rectangular layer. Place the first layer of dough into a greased pan. Apply one third of the filling onto it. It is better to take a uniform with high sides.

  8. STEP 8

    STEP 8

Place a second layer of dough on top and fill it again. And repeat with all parts of the dough and filling. Do not put the filling on the top of the dough. Cut the baklava into diamonds without touching the bottom layer of dough.

  9. STEP 9

    STEP 9

Brush the top of the dough with beaten egg yolk. Place half a walnut on each diamond. Preheat the oven to 200 degrees. Place the baklava in it for 15 minutes. Then remove the mold, but do not turn off the heat. Pour melted butter over the baklava. Go over the cuts again with the knife.

  10. STEP 10

    STEP 10

Bake the baklava for another 45 minutes. Pour the finished hot baklava with honey and leave it alone for half an hour so that it is well soaked. You can serve. Bon appetit!

The recipe is great!!! The baklava turned out very tasty. It took me almost 2 times more flour. And in my opinion there is a lot of honey filling, next time I will try to make less.
