    Wash the apricot, remove the pits, cut into halves and leave aside for now. Divide the eggs into whites and yolks. Beat the whites with a pinch of salt until beautiful peaks form.

    Melt the butter, add sugar, vanilla sugar, yolks, lemon zest and stir until light foam

    Sift the flour, mix with baking powder and mix with the yolk mixture, alternating with milk. Carefully add, stirring the whipped whites with a spatula.

    Grease a mold (mine is 24*34) with butter and sprinkle with flour or line with baking paper. Pour the dough and arrange the apricot beautifully, cut side up.

    Bake for 35-45 minutes (depending on the oven) at 180*. Leave to cool. Sprinkle with powdered sugar if desired
