STEP 1
How to bake a simple homemade kefir cake in the oven? Prepare the ingredients according to the list. All products should be at room temperature. Turn on the oven at 180 degrees. Beat chicken eggs into a deep bowl, add sugar, pour in kefir, add a pinch of salt to balance the taste, and vanilla.
STEP 2
Beat the ingredients with a mixer or whisk until the mixture is homogeneous in consistency.

Pour vegetable oil into the mixture and stir again, all the loose ingredients should be completely dissolved.
STEP 4
Pour sifted wheat flour combined with baking powder into a bowl with liquid ingredients. Add flour in small batches, stirring the dough with a spoon each time so that it does not form lumps. The flour must be sifted to remove foreign objects that may be in the store-bought product, as well as to saturate the flour with oxygen and make the product fluffy and airy.
STEP 5
The dough should have the consistency of thick sour cream, but fluid. You may need a little more or less flour than the amount indicated in the composition, because the density and quality of flour varies from manufacturer to manufacturer. STEP 6
Add dried fruits to the dough. I used dried apricots, prunes, and raisins. Rinse dried fruits first, soak in hot water, dry and roll in flour. You can also add nuts, grated chocolate, and candied fruits.
STEP 7
Pour the dough into a cake pan lined with parchment and greased with vegetable oil and place in the oven preheated to 180 degrees for about 40 minutes. You can check the readiness of the cake with a wooden skewer: insert it into the middle of the cake and immediately remove it. If the skewer is dry, the cake is ready.
STEP 8
Remove the cake from the mold, let it cool, sprinkle with powdered sugar and serve with tea, coffee or milk. This cupcake can be topped with icing sugar or melted chocolate and decorated with fresh berries. From this dough you can bake not only large cupcakes, but also portioned cupcakes in silicone molds.
