Spinach pie
Representatives of different countries love to cook spinach pies with added cheese. Perhaps the Greeks do this more often. Georgian cuisine also has a lot of baked goods with this filling. The Bulgarian banitsa, a pie twisted into a spiral with a tube, can be filled with it. Not to mention the more traditional open and closed pies.
The spinach filling itself looks and sounds boring. Therefore, it is still better to add something to it. Classically - cheese, feta, Ossetian, Imeretian and the like. Boiled hard ones will not work here. If you take cheese, be sure to consider its saltiness. The cheese is cut into small cubes and mixed with boiled, squeezed and chopped spinach.
In addition to cheeses, fried onions and boiled chicken eggs go well with the filling. Cottage cheese is also good.
You can use any dough to suit your taste. According to the classics, again, it will be puff pastry. Yeast, lean, shortbread are suitable. The most delicious spinach pie will turn out if it contains four times more filling. That is, a thin baked puff pastry, and inside there is a thick layer of vegetables.
When opened, the pie is good with sour cream or cream filling. Spinach and cheese are placed in a “bowl” of shortcrust pastry, and the whole thing is topped with a milk mixture beaten with a raw egg.
The banitsa with a glossy surface looks truly festive (brush with whipped egg white when baking). And if you sprinkle sesame seeds on top, it will turn out great. Plus, this pie looks very interesting in cross-section. Add red fish inside instead of cheese and you will get a royal dish.
