Beetroot borscht
This is a suitable treat for Lenten lunches and family dinners, regardless of the season. Sugar beets are a product with a long shelf life. Having collected the autumn harvest from your own garden bed, it is placed in a dark place and used to prepare an appetizing first course all winter. It gives the liquid base its bright color, sweet taste and delicate aroma. If the borscht is cooked with frying, then the beet pieces are fried along with carrots and onions.
In the dietary version of the dish, they are added directly to the pan. Potatoes and white cabbage must be added to borscht. They are finely chopped and boiled until soft. Some housewives boil one potato whole, and 10 minutes before readiness, take it out and puree it to thicken the broth.
