Zucchini fried with garlic in jars
Step-by-step preparation
STEP 1

How to make fried zucchini with garlic for the winter? Prepare all the products that are listed. If possible, use young zucchini for this recipe. They have a thin, delicate peel and practically no seeds inside. Wash the zucchini well and dry with paper towels. If you have ripe fruits, cut off the peel and remove the middle with seeds.
STEP 2

Peel the garlic and rinse in clean water. Cut the zucchini into slices approximately 0.7-1 cm thick.

The next step is the most time-consuming. The zucchini needs to be fried. To do this faster, use two frying pans at once. So, heat odorless vegetable oil in a frying pan. Place the circles in the oil. Fry until golden brown on one side and the other.
STEP 4

Place zucchini on paper towels. This will get rid of excess oil.
STEP 5

Pass the garlic cloves through a press or garlic press. Rinse the dill umbrellas. Wash jars and lids thoroughly and sterilize using any method convenient for you. This can be done in a water bath, in the microwave or in the oven. Place an umbrella of dill and some garlic on the bottom of the jar.
STEP 6

Next, make a layer of fried zucchini. Place some of the circles and add salt. Add some garlic again.
STEP 7

Next, make another layer with zucchini. Salt and add garlic. And so on until the jars are completely filled. While filling the jars, shake them a couple of times to pack the zucchini more tightly.
STEP 8

Pour vinegar on top of each jar. I got 20 ml each. for one half-liter jar.
STEP 9

Cover the jars with lids. Line the bottom of a wide pan with a thin towel. Place the jars in a saucepan, pour warm water up to the hanger and place on the fire. After boiling, sterilize the zucchini for about 20-25 minutes. During sterilization, liquid is formed in the jars, which will fill the container to the top.
STEP 10

Close the jars with lids and turn the top upside down. Wrap in a warm blanket and leave until completely cool. Afterwards, remove the workpiece for long-term storage in any cool, dark place.
