    You only need a few ingredients to make this simple salad. Prepare cabbage, tomatoes, cottage cheese, onions, garlic and herbs. It is better to use young cabbage; it is more tender, not tough, has a sweetish taste and is crunchy. So, rinse vegetables, herbs, peeled garlic and onions under running water.

    Chop the cabbage into thin strips. The thinner the cabbage is sliced, the tastier the salad will be.

    Cut the tomatoes into small slices. It is better to use seasonal, fleshy and juicy tomatoes. Cherry tomatoes are also good for salad; they are sweeter and more aromatic. You can optionally cut the tomatoes into cubes as you like.

    Chop the onion into thin feathers. What is the best onion to use? Use shallots or white ones, they are milder in taste and ideal for vegetable salads. Add onions to cabbage and tomatoes.

    Grate the garlic on a fine grater or pass it through a press, send it to the salad bowl along with the cottage cheese. You can add a little more garlic to your taste, or exclude it from the list of ingredients altogether. I also added frozen Provençal herbs for taste; they go wonderfully with cottage cheese and tomatoes.

    Add finely chopped greens to the salad, I used parsley and dill, you can use basil and green onions. Add salt to taste and season everything with vegetable oil.
