  1. STEP 1

    STEP 1

How to make moonshine from wheat without yeast at home? Prepare the necessary ingredients. In order to ferment with wild yeast, you will need high-quality premium wheat grains with a good shelf life.

  2. STEP 2

    STEP 2

Rinse the wheat under running water and drain in a colander. Give time for excess water to drain and transfer the grains to a wide dish - a bowl or tray.

  3. STEP 3

    STEP 3

In a small saucepan, combine water and fermenting sugar. Bring the syrup over the heat until the sugar is completely dissolved, and then cool it to 30 degrees.

  4. STEP 4

    STEP 4

Pour warm syrup over the wheat so that all grains are evenly covered with liquid.

  5. STEP 5

    STEP 5

Cover the container with a napkin or gauze so that the mash has the opportunity to “breathe”, and put it in a warm place for about three to five days, it will be different for everyone. It depends on the quality of the beans. During this time, wild yeast will wake up and activate its work. During this time, the ferd must be stirred at least once a day to prevent it from spoiling.

  6. STEP 6

    STEP 6

On the third day, when foam appears on the surface of the wheat, the ferment is ready and you can begin preparing the main mash.

  7. STEP 7

    STEP 7

Pour all the wheat ferment into the fermentation bottle, add the remaining sugar and water. Place a water seal on the bottle (or a medical glove with a small hole in the finger) and leave it in a warm place without direct sunlight for 10-12 days. By the way, some models of moonshine stills provide for the preparation of mash directly in the tank. But to do this, you need to be sure that this function is provided by the manufacturer for your device.

  8. STEP 8

    STEP 8

Fermentation with wild yeast is not as active as with baker's yeast, so you should not expect any violent process and active formation of foam. Stir and shake the mash periodically and taste it after about 10-12 days. When the sweetness disappears and the mash becomes bitter, you can begin filtering.

  9. STEP 9

    STEP 9

The mash is filtered through several layers of thick gauze or through a special filter in order to get rid of all unnecessary impurities. The mash turns out yellowish-cream in color with a characteristic smell of fermentation.

  10. STEP 10

    STEP 10

Assemble your moonshine still according to the instructions and pour the filtered mash into the tank. Place the moonshine still on medium heat. I use an electric stove for heating.

  11. STEP 11

    STEP 11

When the temperature in the system reaches sixty degrees, it is necessary to connect cold tap water to the device to cool the future distillate.

  12. STEP 12

    STEP 12

Distillation of moonshine will occur very soon - at approximately 75 degrees. The moonshine will begin to flow in a thin stream into the collection container. The so-called “heads” are the first 50-60 ml. distillate are extremely toxic to the human body and are not suitable for consumption. This amount of moonshine just needs to be poured out.

  13. STEP 13

    STEP 13

Make sure that the temperature does not rise above 80-85 degrees. In this case, immediately reduce the heat to prevent damage to the moonshine still. In general, the maximum heating temperature of the tank of moonshine stills may differ. Refer to the information written in the instructions for your moonshine still. Distillation of moonshine must be completed at a temperature of 37-35 degrees. Enjoy tasting!

I had wheat grains, and I decided to make mash for moonshine from wheat without yeast at home. I did everything according to the recipe. Foam on the wheat wade appeared on the second day. The mash was infused in a 19 liter bottle. She put a rubber glove on the neck of the bottle. For the first 9 days nothing much happened, and I already thought that something had gone wrong. But on day 11, good fermentation began. I left the mash for another 12 days. It turned out white. My husband made moonshine from mash. Distilled twice. I don’t drink moonshine, it’s too strong for me. But the male half of the family was satisfied, they said that it turned out just right. Thank you very much for the recipe!
